Momma OB's Chicken Chili

Reviewed: Oct. 2, 2007
I put this together last-minute for a football watch party. It was FANTASTIC! I only had 2 cans of black beans, so I used that instead of the kidney and chili beans. I also used 2 cans of Ro-Tel in place of the canned tomatoes and canned chiles. Finally, just due to personal preference, I only used about a tablespoon of diced onion. This was delicious and was even better the next day as leftovers!

Delectable Marinated Chicken

Reviewed: Aug. 20, 2007
I had to slightly modify this recipe due to lack of certain ingredients. I cut out the liquid smoke, sesame seeds, molasses, and garlic pepper and it still turned out to be a fantastic teriyaki marinade. I also added a dash of cayenne pepper. All I had on hand was chicken breast tenderloins, so they only required about 8 min grilling time on each side. I will be making this again and again!

Mom's Applesauce Pancakes

Reviewed: May 28, 2007
These were just wonderful. After reading all of the warnings about the thickness, I made sure to add some extra milk until it was the consistency of the pancake batter I usually make. The flavor and texture were great. I will be making these again soon.

Easy Lasagna II

Reviewed: Jun. 4, 2007
This was fantastic! I was cooking for someone that does not eat meat, and the recipe was just delicious, even without the beef. I used a little less cottage cheese than it calls for (one 24 ounce tub was enough). Also, I used the "oven-ready" variety of lasagna noodles, but I'm not sure if this is necessary. This was a huge hit with my family and I am making it again tonight!

Quick and Easy Brownies

Reviewed: Jun. 27, 2007
They may not be the prettiest brownies I've ever seen, but these were delicious. Mine kind of collapsed in the oven so they looked nothing like the picture, but they came out like a wonderful combination of fudge, cake, and brownie. Quick and easy. I will make these again very soon. I halved the recipe, left out the nuts, and added a few tablespoons of milk.

Alfredo Mostaccioli

Reviewed: Jul. 11, 2007
I would give this ten stars if I could. This was just fabulous. I substituted Tony C's cajun seasoning in place of the salt, and I used about half the parsley the recipe called for. My husband could not stop complimenting the dish; I think he thought it was a lot more complicated than it actually was!! :-)

Actually Delicious Turkey Burgers

Reviewed: Jul. 18, 2007
These were fantastic! I didn't have breadcrumbs so I used crushed saltines. I also added a few teaspoons of worcestershire. Also, I cooked them on our gas grill for about 5 minutes on each side over low to medium heat. I will be making these again soon!

Deep Dish Brownies

Reviewed: Oct. 2, 2007
After trying this recipe, I threw out my other 2 brownie recipes. Whoever it was that called these "life-changing" was not exaggerating. I only used 2 eggs and left out the baking powder, per the prior reviews. I will make these again and again.

Baked Ziti I

Reviewed: Feb. 24, 2008
This was easy and came out perfectly. I left out the provolone since I had none on hand (so I just substituted more mozzarella), and I used penne instead of ziti. This was fantastic. Try it!

Easy Biscuits

These were very good. However, both times I made them, they came out a little crispier than I usually like. Very good flavor, though.

Chewy Chocolate Cookies II

Reviewed: Oct. 7, 2009
I threw these together last-minute to take to a potluck at work. They were so quick and easy, and I was able to make them with basic ingredients I had on hand. One comment I got was that they had "the perfect chocolate flavor."
