Tomato Bisque III

Absolutely delicious. I doubled the recipe, used fresh tomatoes (16 Campari, didn't bother peeling, seeding, and I quartered instead of diced because I knew it would all get pureed in the end), a 6oz can of tomato paste, and 3/4 cup of half-and-half cream instead of 1/2 cup of heavy cream. Will definitely make it this way again.

Butternut Squash Soup II

True, I didn't follow the ingredients list to the "t". However, having followed suggestions from other reviewers, this yielded a VERY delicious soup that will definitely be worth remaking. This is what I changed. I omitted the potatoes and celery. When cooking the vegetables (squash, carrots, and onion) in butter, I added a tablespoon of minced garlic. Once the vegetables had 5 or so minutes on the heat, I added 4 cups of chicken broth, 1 tsp cinnamon, a dash nutmeg, a pinch of curry (just to bring out the complimentary spices, there is no real hint of curry in the final product), 1/4 cup of spiced rum (I used Captain Morgan's Tattoo), and 1/2 cup of half and half. Everything else I followed according to the recipe. I had a bowl with a dollop of sour cream, and then one without. The difference is negligible. I don't know what the original would taste like, but these changes made this soup absolutely fantastic. My husband just finished licking his second bowl clean. UPDATE:: So this is the second time I've made this soup, and here are the following changes I made. Split a butternut squash in half, put em in a bowl over about half an inch of water, and microwaved for 15 mins to soften. Into the stockpot, I threw in a sweet potato with the carrot, onion, and squash. Added 3 cloves of garlic, the same spices I used last time, except for the rum, and half and half. Delicious, and I think even better than last time.

Apple and Brown Sugar Corned Beef

I've always gone to this recipe for corned beef. I've only ever made it in the crock pot though, and there wasn't any room for the vegetables and the meat wouldn't be completely covered. Now, I've tried this in a stock pot on the stove (40 min per lb) and doubled the broth ingredients. This was the best it ever came out, absolutely delicious and moist. I will never go back to the crock pot.

Irish Cream Creme Brulee

This recipe was delicious! Do try to caramelize the sugar with a blow torch, I followed someone's advice by putting these under a broiler, and it just didn't work out.

This was chunky and delicious! Don't try to substitute lime juice and cilantro, we did on our first batch and it just didn't have the same punch. Stick with the ingredients and you're sure to have a real pleaser here.

Creamy Broccoli Soup

This was delicious! After following recommendations from other reviewers, I doubled the recipe, and it made about 5 servings that disappeared very quickly. I doubled everything except the cheese, 1- 8oz block of sharp cheddar was just enough, and anymore would have been overwhelming in my opinion.

Miss Betty's Super Quick Dinner Rolls

I followed a few suggestions for making self-rising dough from (flour, baking powder, and salt). I also threw in some garlic powder into the mix, sprinkled fresh rosemary on top of the rolls, which I'd set on a greased cookie sheet, and glazed with melted butter. In a convection oven, I baked for about 20 minutes, until the fork I used to test with came out of one of the rolls clean. They came out moist, flaky, and delicious! Thank you for the great base recipe!

Creamy Potato With Rosemary Soup

This is a great recipe. Had to make it again because the first batch disappeared so quickly. Used 2% milk this time because I ran out of half and half. I noticed using entirely half and half made the soup very thick and heavy, whereas using only milk made it more of a cream soup. I threw in a little extra garlic (as per my norm) and went a little heavier on the cayenne, the soup had just the right amount of heat and was absolutely delicious. I also threw in some chives at the end of the cooking, everything was great. I served it with bacon on the side and dinner rolls (recipe found on this site, Miss Betty's Super Quick Dinner Rolls).

Orange Glazed Carrots

This came out GREAT! Changed things a bit according to other people's reviews. I covered the carrots in orange juice and set them to boil. Meanwhile, made the brown sugar melted butter glaze, and added a pinch of nutmeg and a little cinnamon. Once the carrots had boiled and became tender, we combined the orange juice carrots and the glaze. Realized the glaze was too liquidy, so we put it back on the stove and thickened it with some flour and water. Got the glaze to a nice syrupy consistency, covered the carrots, powdered the whole dish with a little additional cinnamon. Served and was a big hit. It was delicious, and we'll make this again next Thanksgiving!

Slow Cooker Ham

Delicious! Got an 8lb spiral cut honey cured bone-in ham, covered the bottom in brown sugar, covered the ham in brown sugar, as per the instructions. Added a can of pineapple slices all over the ham, poured in the remaining pineapple juice, set the crockpot to low for 4 hours. Alas, bone-in made it impossible to cover in my slow cooker, so I followed someone else's advice and just covered the whole thing in foil for the duration of the cook. When the ham was done, I threw some maraschino cherries on top and called it done. It was beautiful, smelled wonderful, TASTED fantastic, didn't take up any room in my already full oven, and served as a great last minute addition to our Thanksgiving feast! Will definitely make it again next year!

Easy Pork and Sauerkraut

I made this for my husband's birthday. This is a HUGE hit!!! Exchanged the pork roast for bratwurst sausages, that I cut up into 1 inch chunks. Also, couldn't find dry mustard, used a few squirts of regular mustard. This came out delicious, and everyone kept going back for more. I will definitely make this again!

Chicken Soup

I used every bit of left over in my fridge to make this soup in an effort not to leave the house. Lemon Garlic and Herb Shake and Bake chicken, potatoes and carrots from the Guinness Corned Beef recipe I found on this site, some fresh celery, and some left over spaghetti. Best soup I've ever made!!!

Beef Stew V

We were snowed in when we made this, so we just pulled together what we had. We added a little extra red wine and a bay leaf in the beginning, didn't have any celery or pearl onions. We ran out of flour after working on the meat, so we thickened the stew with bread crumbs and half and half milk. Also, after adding the vegetables, we only cooked an additional 45 minutes. The vegetables retained a slight outer firmness but were soft inside, the beef was tender and absorbed a wonderful flavor, the stew was rich and delicious. We enjoyed it with sweet Challah bread, and will DEFINITELY make it again! UPDATE: Made this again and had to make a few small changes. Being pregnant, I decided to avoid using the wine, so I replaced with 1 more cup of water and 1 more beef bouillion. Also doubled the garlic, and unfortunately forgot to pick up pearl onions for this. Had to cook an extra 5 minutes to soften the potatoes a little more. YUM!! This came out absolutely DELICIOUS and will continue to be a repeat, with and without wine.
