Chickpea and Pasta Soup

I love garlic, but I thought that it was too overpowering in this soup and I didn't like the chickpeas and pasta together.

Grilled Portobello Mushrooms

Délicieux! I adjusted the recipe to 4 servings and used olive instead of canola oil. I thought the suggested amount of garlic seemed like a bit too much, so I used two very large cloves instead. These shrooms are a great substitute for burgers. My vegetarian guests were so pleased. I'll definitely be making these again.

Rice with Herbes de Provence

Simple and Delicious! Used one 14 oz can of low sodium chicken broth, so added a little water to make it two cups. Will use this recipe again and again!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Wonderful idea for a quick and light meal. Also, the ingredients are so basic that they are most always available in my kitchen. Used frozen spinach because that was what was on hand, but next time I will definitely use fresh spinach.

Artichoke Bruschetta

Wonderful idea! As other cooks suggested, I used only one tablespoon of mayo and substituted the rest with olive oil. I also added pepper and used shredded Romano cheese rather than grated. Instead of broiling the dip, I put it in the oven along with another app at 375 degrees for 5-10 minutes. Meanwhile, I brushed a little olive oil on the baguette slices and toasted them in the toaster oven. I presented the bread on a plate and the dip in a bowl. Next time, I'm going to try it without mayo. Thanks for the recipe.
