Grandmother's Sour Cream Cucumber Salad

This tastes better the next day as the sweet and sour permeate the cucumbers. I have been making this for years and I always double what I think so I can have some the next day and I don't like left overs! I have used artifical sweetner as well but need to increase liquid and I never use salt as I like the sauce that the cucumbers make while it sits.

Mexican Lasagna Lite

I tried this weekend and loved it - even had seconds - something I rarely do. I did not add the chiles (have an allergy) but the flavor combo was great. Used a tip of spreading the refried beans like peanut butter and it helped. The textures are difficult to spread without a spatula (I finally figured that out), it smelled great and tasted even better. Made this at a sick friends home and I will make in individual casseroles so I can enjoy it often as I live alone

Thanksgiving Meatloaf

I made this a few weeks ago and have been dying for it again! I made a gkaze by adding warm water to cranberry sauce and coated it. I did not add the eggs - My loaf was only 1/2 lb so a bit different but the leftovers were fabulous with cranberry sauce on bread - like having thanksgiving on a sandwich and even tastier as a left over!

Potato and Egg Casserole

I haven't had this for 20 years - I made the lazy quick bersion . I opened a can of sliced new potatos and layers with eggs I sliced on the egg slicer. I melted the butter in microwave, added and whipped in sour cream then returned to microwave with a handful of diced onions to add a bit of flavor. Some cracked peper on top and I got to have grandmom's cooking in a short time. I forgot to mention I made the 3/2 layer in a loaf pan and cut the recipe in half and it was nice. I had some as soon as half hour had passed but grandmom let it set for a while so will have more in a bit

Kapusta II

This is similar to my family recipe. We don't ever use salt pork (olive oil to coat this til it glows) We also saute onion with the cabbage and cook them until the onion is transparent. Add the noodles and voila - a new batch is ready. My Ukrainian husband also added this to his recipe repetorie.
