Creamy White Chili

Made mostly as directed in that I used only 1 can of green chilies. Very good but just a smidgen too spicy. Will make again but reduce the cayenne a bit.

Chef John's Perfect Prime Rib

I have done this three times. The first (3# 2 rib roast) came out rare to med-rare. The second was a 6# 4 rib roast and it came out med. rare. The last time was a 10# 6? rib roast and it came out med-WELL. All were choice grade. I have a modern oven, followed recipe exactly except let the 10# prime rib stay out for 5 hours to bring to room temp. Overall I like the ease but I would need to adjust the temps accordingly.

Turkey Pot Pie III

Made as directed and way too salty. Used left over Thanksgiving turkey which was not salty so must have been the soup? If less salty, would have added another star. Won't make again, sorry.

Ham and Beans

My wife gave it a 4 as she likes ham and beans and she is the one who requested it. I gave it a 2 because I don't. To me, it was very bland and the texture was not pleasing. However, my wife thought it tasted mostly like ham and beans is supposed to.

Followed recipe using fresh juices and did not include club soda. Allowed to "marinate" for 24 hours. Used cheap spanish red wine and cheap brandy. Slightly sweet and very fruity. Thanks!
