Prosciutto Wrapped Asparagus

Served for Christmas dinner as an appetizer. I blanched and peeled asparagus with potatoe pealer to get rid of any tough outer fiber. After assembly with cheese and prosciutto I placed them under the broiler for about 20-30 seconds to melt cheese and slightly crisp the prosciutto. Served at room temp. Everyone loved them!

Refreshing Spaghetti Squash and Cucumber Salad

Cooking time for can vary greatly depending on the size of the squash. Excellent recipe, followed it exactly first time. Be careful with amount lemon juice and oil. Might be a little too much for tatses. Optional ingrediant would be some dried figs sliced paper thin. About 1/4 cup.
