Chewy Chocolate Cookies I

I wanted to make chocolate chip cookies, when I realized I had used all of my brown sugar cooking for Thanksgiving. I came to my trusty all-recipes website, found this recipe, and was pleasantly surprised. They were moist and rich without tasting too cakelike. My kids were thrilled! I used about a fourth of a cup of shortening in place of some of the butter to keep them softer longer when stored.

Banana Split Cake IV

I made this dessert to offset all of the rich cakes and pies made on Thanksgiving. I used neufchantel instead of regular cream cheese, as well as the lite cool whip to cut the fat. You can't really skimp on margarine, but all in all it made an excellent lite and fruity dessert that left those heavy cakes and pies untouched on the kitchen counter.

Caramel Apple Bars II

It really didn't take a lot of time to cook, but you must use fresh apples. I made it once with apple filling and it made it too soggy. I liked it a lot, but I made them for a bake sale at school, and I had quite a few left over. My kids weren't impressed either.

This cake baked up moist and delicious. It was pretty easy, too. I may never buy cake mix again. I'm not quite sure what the coffee did, but hey, it worked!

Award Winning Peaches and Cream Pie

This is an awesome recipe! Sometimes I use neufchantel instead of cream cheese and skim milk in place of two-percent or whole. When you really want to indulge, it's excellent with french vanilla ice cream. Once I made them in tart cups. They're always a hit!

Good Old Fashioned Pancakes

I usually use pancake mix. Today I was out. These pancakes were awesome! My kids wanted seconds! If you like a light or fluffier pancake, add more milk. I like 'em thick. I added a little vanilla and cinnamon for a kick. My kids want them again tomorrow!

Chocolate Fudge Pound Cake

This cake tasted awesome. When it comes to chocolate, the more the better for me, but this cake did not need icing or add-ins. Icing or chips would be overkill, nuts or coconut maybe. It was extremely moist--great with a glass of milk. My only problem was that the batter prepared as directed did cook over, so it wasn't very pretty the first time. So the next time I made it, I kept about a cup and a fourth of the batter and made a half dozen cupcakes with it. The cake stayed in the pan, the kids got cupcakes, and I had delicious cake that was pretty, too! This recipe is good with any flavor box cake and icing.

Sweet Potato Pie I

This is a really good pie, but if you want a really great pie, sub the white sugar for 2/3 cup of light brown sugar and the milk for 1 cup of heavy whipping cream. Also make sure those half teaspoons of nutmeg and cinnamon are heaping half teaspoons. I've been using this recipe for two years, and no one ever believes it's homemade (and there's never any left)!

Cheesy Tuna and Noodles

So simple and quick in a pinch, but so good. My kids love it. I sub the cream of mushroom for half cream of chicken and half cream of celery. Also, sometimes I use canned chicken rather than tuna.

Brooke's Best Bombshell Brownies

Tried this recipe this week. OUTSTANDING!! I have been looking for a brownie recipe that was made from scratch with that chewy box brownie consistency. This is a winner here! I've probably tried a dozen recipes over the years, and these were my best homemade brownies yet--thick, fudgy, flavorful--yum! My family adored them. No more box mix for me. I melted about a quarter cup of peanut butter with my butter before mixing in the sugar. So good! Can't wait to try some other variations--marshmallows for rocky road, some caramel and pecans for turtle brownies, maybe even snicker or cheesecake! Thank you!
