BBQ Chicken Chopped Salad

I made some minor changes for what I had on hand. I used jarred roasted red peppers, cucumbers instead of jicama. I tossed the lettuce with a small amount of Italian dressing, the remaining ingredients I used lime juice. I made a fresh chicken breast, chopped it up and mixed it with Guy Fieri's Asian BBQ sauce. My husband loved it. we will make again!

Northern Fried Green Tomatoes

floured and refrigerated tomatoes for an hour, then started this recipe, it made a big difference, all ways do that first. This recipe worked well, I will use it again. I guess us Yankees need to stick together.

Mediterranean Zucchini and Chickpea Salad

mix the dressing separately, then add to the salad. let marinade in fridge for a couple hours for the best flavors, very good, will make again!

Broccoli and Cheese Mashed Please

I used steamed fresh broccoli. But more importantly I used one 98% fat free mushroom soup, and one cream of broccoli soup. my mayo is Hellmann's with olive oil. I only used half the cheese, all in my attempt to make this a little healthier. I was disappointed at first, because it was very soupy, and incredibly hot! letting it sit for 20 minutes is better after taking it out of the oven. then it set, and had a wonderful flavor. will make it again, will make a great pot luck dish!

Creamy Chicken Cordon Bleu Casserole

Noting some of the other reviews I doubled the sauce, I was glad I did, otherwise it would have been too dry. My 2 chicken breasts ended up being too much, almost 3 cups! and my deli counter lady couldn't figure out how to cut 8 oz. of ham, so that was a little heavy too. Both issues not the fault of the recipe. It was a lot of food, it made 8-10 large servings!

Cream of Potato with Chorizo and Kale Soup

I wanted to have more vegetables incorporated, so I had to add more vegetable broth too. I used broccoli crowns, mushrooms, onions, zucchini, a 1/2 leek. I had 2/3 lbs of tofu chorizo to use. I don't usually use white potatoes, but I bought 2 large ones that gave me 4 or 5 cups of chopped potatoes. after the potatoes cooked I added 1 cup of silken tofu, instead of adding cow's milk later. I had to add a little more water when I added the kale, it was too thick, my doing because of the tofu. it ended up very creamy. it was very filling, the only thing we didn't like was the kale, it was still too chewy for me. it didn't need salt n pepper.

Chicken Alfredo Pita Pizza

The only changes made were I used a 12" thin pizza crust, and no mushrooms, because my husband doesn't like them. We loved it. he ate 5 slices , I had to fight to get 3. I was worried about layering all the hummus, pesto and alfredo, but found very thin layers worked well. will make again

Beef Caldo with Spinach

it was a good start, but too tomato, no spice. We don't eat potatoes, so I substituted 2 cans of great northern beans. I added a tsp of Italian spices, but it wasn't enough. I added a Tbs of cumin, that was the trick. turned out much better, good flavor, everyone enjoyed it then.

Lentils with Chorizo

I really needed more specific instructions about the amount of water to cook with the lentils. Large pot to me, meant my dutch oven, which meant I probably had 3-4 cups too much water. I ended up with a pot of colored water, no taste. I tried to cook the water down and my lentils disolved. I ended up cooking more lentils to add to the pot, adding mixed vegies, a can of diced tomatoes, chicken soup base and some corn startch to thicken it. this all could have been prevented with better directions in the first paragragh.

Black Bean, Corn, and Tomato Salad with Feta Cheese

We don't eat corn, so I subsituted an apple for the sweet flavor. I didn't have a green pepper, but didn't miss it. I cut the oil down to 1/2 cup, as recommended. My husband took one bite and said, "add this to your recipe box, it's a keeper". I'm sure I will make again.

Crab Cakes with Coleslaw and Lime Dill Yogurt Sauce

First, I don't know how this could be done in less than 2 hours. The coleslaw was so dry, I needed to add 1/2 c low fat mayo to make it edible. I didn't care for the consistancy of the fat free yogurt sauce, and yes, I agree it is way too citrusy. That being said we did enjoy the crab cakes. I substituted ground up pistachios for the bread crumbs, to keep it more low-carb. I also fried them in some olive oil to give them some crisp. becareful not to try flipping them too early or they fall apart. I probably will make the crab cakes again.

Three-Meat Meatloaf

the meatloaf was a wonderful, meaty, manly meatloaf. My husband loved it. Leftovers will be great for sandwiches. the tomato soup topping, not so much. waste of time. my husband thought it was ketchup anyway. skip it!

Curried Shrimp

I added celery and diced tomatoes with green chilies, over brown rice. My husband and I thought it was very good, I will make it again. I may leave out half the sour cream, I think it covered up too much of the flavor.

High Temperature Eye-of-Round Roast

My roast was only 1.72lbs. so I only cooked it 14 minutes, but after 2 1/2 hours of sitting, it was ice cold. I read other reviews about reducing sitting time, but was affraid my roast wouldn't be done. it was done rare enough, just cold.

Banana Split Bread

I used fresh cherries, white chocolate chips and eliminated the nuts. My husband was so happy with it, he took some to work. The boss loved it too, even asked for a copy of the recipe. we will make it again!
