White Chocolate Macadamia Nut Cookies IV

These were very good - but mine puffed up a bit more than I liked. Next time I will refrig. the dough and flatten with a spoon before baking.

Clark's Quiche

Reviewed: Feb. 19, 2012
Good - but actually too much of a sour cream taste for me. I think it lended to its creamy texture - so I will just cut back a bit next time I make it. I also used a tart pan - which is a bit wider - and it worked perfectly (vs a deep dish pan). Because it is wider (thinner) I reduced the cooking time by 5 minutes.

White Chili with Ground Turkey

Reviewed: Jan. 12, 2012
I followed this exactly and I really liked it...BUT it does it really has a heavy cinnamon taste. It reminds me of the flavor of Skyline Chili (if you're familiar with the Cincinnati chili). While I kind of liked it, the rest in my family thought it was "weird". Next time I'll probably follow what others suggested in the review and decrease the cinnamon by at least half.

Caramel Bars

Very good! But as written - it really should go into an 8x8 or 9x9 pan - not a 13x9. If you want to use the larger size pan, do as others suggest and double to base ingredients (1 cup butter is enough). There wasn't enough for the topping if you don't. The flavors are wonderful together!

Six Can Chicken Tortilla Soup

Reviewed: Oct. 17, 2011
5 stars with all the additions others have suggested. What I did (which worked out great) is: 2 cans chix broth, 1 can of cream of chix, 1 can black beans, 1 bag frozen corn, deli chicken cut up, 1/2 jar chipolte salsa, and rotel tomatoes can (not whole can as the kids aren't tomato fans). Seasoned with chili powder and taco seasoning.

Sweet Restaurant Slaw

Loved it - wasn't too sweet after it chilled. I originally didn't think it was dressed enough - but it was completely creamy once it chilled (almost too much dressing). May cut the portions back next time - but the flavor profile was just right!

Mediterranean Lemon Chicken

Everyone loved it! I doubled everything (except the oregano) - and marinated for about an hour before I cooked. 425 for 38 minutes - then broiled a couple to get a good crisp. Will definitely make again. Made the whole house smell wonderful!

Wonderful favors - especially for the fall. Whole family loved it. Cooking in the bag also help it stay moist. Will definitely make again!

Hawaiian Chicken I

I thought this was just OK. The sauce was way too runny for me. Would probably add corn starch next time. The kids did like the taste. They said "better than plain chicken". So at least that's something.

Chewy Chocolate Peanut Butter Chip Cookies

Reviewed: Sep. 1, 2010
Very good flavors - but I think the butter is why some of the reviewers said they spread too much. First, there is a bit too much butter. I used 1 and 1/4 cups (reduced by 1/4 cup) and they didn't spread too much. Also - don't melt the butter! You should soften it at room temp and then beat in bowl until it is creamy. I also (almost always) add twice as much chips - because that's the way my kids like them! For this, I use one bag of peanut butter chips and also a package of peanut butter M&Ms. Yummy!

Mexican Salad

Very good - but I thought 1/2 cup olive oil is too much. 1/4 cup was much better. And because I LOVE lime juice - I used 4 TBSP - and next time I will even use more. I'm also a big fan of fresh corn (in season) - and 3 ears was the perfect amount.

Creamy Cream Cheese Frosting

Taste great - but consistency is more like cool whip, so it won't firm up the way many frosting do.

Topless Blueberry Pie

Good recipe - especially if you don't want to cook in the oven. It set up OK - but if you didn't eat it within a day or so, the consistency became runny.

Enchiladas

Reviewed: Nov. 22, 2009
My kids FINALLY liked an enchilada recipe. I think the reason this is a winner is it used the cream of chicken soup and mozzaralla cheese blended so well with the spicer beef/jalapeno mix. I did put some enchilada sauce and some cheese on top while it cooked. I'll definitely make again.

Banana Crumb Muffins

Reviewed: Oct. 29, 2009
This is the same recipe as "Banana Muffins II" - but with the crumb top. It is excellent! If you use a convection oven - 350 degrees for 18 minutes is perfect for 12 muffins. I wouldn't do 375 degrees. I also added vanilla and cinnamon to the batter - just like others had suggested.

Sweet Mustard Chicken Bake

Reviewed: Oct. 26, 2009
My family loved this - so five stars, but I did have some adjustments. As other mentioned, 1/2 c. butter is way too much. I used 1/4 c. and I think I will use even less next time (it is so flavorful without the extra fat - who needs it)? I also added a tsp of curry powder and it rounded out the dish perfectly. For baking - it came out super moist by baking at 375 degrees for 30 minutes with foil over, then basting and baking an additional 5 minutes without foil. Then basted one last time and put under a hot broiler for about 2 minutes. This gave it a great golden top. (I use a convection oven - so less time was needed than the 45 min mentioned in recipe). It really is a great fall recipe!!

Banana Muffins II

Reviewed: Oct. 23, 2009
Simple to make - and just a wonderful flavor. I had 4 ripe bananas and I really think you can add even more if you have them - it just adds to the flavor. For convection baking at 350degrees - 18 minutes was perfect for 12 regular size muffins. A keeper!

Egg and Sausage Casserole

Reviewed: Oct. 21, 2009
My picky 11 year son just went back for this third helping! I read the reviews - and "bland" is a word some used, but it is perfect for those that don't like too many (competing)ingredients. The oregano gave it an interesting flavor. This is a keeper! (note: I did use 10 eggs and 3/4 cup milk. Precooked the crust for 5 minutes as other suggested. Cheese is a lot - but the kids love it cheesy).
