Creamy Chipotle Chicken

Reviewed: Aug. 28, 2010
Ok, so I only made 3 changes to this recipe (that is a MAJOR accomplishment for me). The first being that I didn't use the butter (I didn't think it was necessary with the richness of the other ingredients), added a can of mushrooms and I added slivered onions for the last 40 minutes of cooking. I increased the broth to 3/4 cup to make up for the loss in liquid. I also solved the issue some people had with the "chunky" sauce without having to pre-heat all the sauce ingredients. I heated my broth in the microwave for about a minute. I then added the cream cheese chunks and cooked at 20 second intervals until it softened somewhat. I then put the broth/cream cheese, soup and peppers in the blender and hit pulse until it was blended and creamy. The sauce went into the crockpot with the frozen chicken breasts and a small can of sliced mushrooms (drained) and was done about 40 minutes later. We served it over rice and it was a hit! Thanks for the recipe :) I know this recipe would have been just as great as written but we're trying to cook a little healthier.

Mushion Pork

Reviewed: Jul. 29, 2008
I've been making this recipe for a while now, but with these changes: I sear the pork chops on the stove before placing them in the baking dish (you can add seasoning while searing if you like; I use a cajun seasoning) and I don't add water to the mix. Simply put the onions on top of the chops and spoon the soup over the top. It ends up making a great gravy so you can serve them with mashed potatoes :) (I know, you shouldn't rate a recipe with changed directions, but I think these changes would alter some people's opinion of the recipe)

Dark Chocolate Cake II

Reviewed: Oct. 1, 2007
This was a great cake. I ended up having to make in in a smaller pan because that was all I had but used the other batter for cupcakes. The only differences i'll make next time will be to add vanilla to the batter and to cook at a lower temperature. Because of the batter being so thin, 325 is much better. I started the cake at the listed temp and ended up lowering it because the middle was still liquid but the edges were getting dark. My cupcakes baked at 325 came out perfect!

Thai Noodle Salad

Reviewed: Aug. 9, 2010
Ok, so as written, I gave the recipe 4 stars. With the changes I made the second go-round it got 5 stars. This was very mild to be a thai salad but had great flavor. SO, the second time I doubled the sauce, added more chili sauce as well as some crushed red pepper and a little sriracha chili sauce (the stuff with the rooster on the bottle). It got rave reviews. Thanks for the recipe!

Chicken Spaghetti Casserole I

Reviewed: Apr. 12, 2010
OK, so i'm only giving 4 stars because as written I think this would be a little bland/dry. I used a combination of a few other reviewers changes. I did the can of medium Rotel instead of pimentos, whiskey instead of wine, red bell instead of green, added garlic (not using garlic in our kitchen is a SIN), extra cream of mushroom (to prevent the dry issue) and a few shakes of cajun seasoning. I was skeptical after mixing the sauce with the whiskey (very strong smell), but once it was baked it was AWESOME! My fiance went back for thirds and made sure I wrote down the changes I made. This was fab :)

Chicken and Broccoli Braid

Reviewed: Mar. 25, 2010
Ok, so first of all, i've been using this recipe for about 10 years. However, to my knowledge it was created by Pampered Chef. Second, I only rated this version with 4 stars because making it this way doesn't come out quite as well. I make mine to the T by the Pampered Chef version. I use my chopper on both the chicken and the broccoli so that it's chopped pretty small. This fixes the issue everyone seems to have of the broccoli not cooking. I also use the P.C. dill mix as it's got the dill, garlic and onion in there. Other than that, this version is pretty close to that one. The only way I change the way I make it is to use the reduced fat crescent rolls.

Coffee Cake Supreme

Reviewed: Nov. 11, 2008
Okay, so i've been given the asignment of making the coffee cake for Christmas morning with my boyfriend's family. I saw this recipe and decided to do a trial run. I baked it in a in a 9x13" pan since I didn't have the bundt pan and didn't layer it. I made the batter as directed but made a slight change to the topping. I added a little more walnuts than called for and about 3T of flour. I then added very thin slices of butter sprinkled over the topping. I took half of the cake with us to his parents house this weekend and my boyfriend and his dad each had 3 slices! Neither of them have major sweet tooths so I took that as a good sign. The only other change i'll make next time is to add more cinnamon. Thanks for the GREAT recipe!

Jerky Lover's Jerky - Sweet, Hot and Spicy!

Reviewed: Sep. 20, 2007
Great jerky recipe! It was gone in about a week (and I made a triple batch). The only change I made was to decrease the smoke flavoring by about 1-1/2 tablespoons. I had the butcher slice the meat for me and I made it in the dehydrator. Thanks for the recipe!

Buffalo Style Chicken Pizza

Reviewed: Jun. 3, 2008
This pizza was awesome! The only change I made was to add sliced red onions to the chicken/hot sauce mix and used ranch instead of blue cheese dressing. I used the Frank's Red Hot Sauce and used a little more than the recipe suggested (that's how we like our buffalo wings). Thanks for the great recipe!

Creamy Pasta Bake

Reviewed: Mar. 20, 2008
This was a really good recipe, but it was made better by adding italian seasoning, red bell pepper, sweet yellow onion and zucchini quartered and sliced. I baked in a casserole with mozzarella and foil over the top. Thanks for the starter!

Four Egg Yellow Cake

Reviewed: Jan. 28, 2008
WOW! This was the best yellow cake from scratch that i've tried. Perfect density and flavor (it didn't come out tasting like a biscuit like many that i've made). The only change I made was to use butter instead of shortening. I frosted it with the "perfectly chocolate chocolate frosting" from the Hershey's cocoa container. YUM!

Tater-Dipped Eggplant

Reviewed: Nov. 11, 2008
This was a pretty good way to use eggplant. I would give 5 stars but felt that as written it would have been oily and very bland. I used about 2/3 of the butter called for, added garlic pepper to the egg and used roasted garlic mashed potato flakes instead of plain in addition to adding salt and pepper. With those changes there weren't any leftovers. Thanks for a great starter.

Sloppy Joes

Reviewed: Jun. 4, 2008
This was a wonderful recipe. Most of the recipes i've tried on here get at least a few ingredients added to what is listed. This was the first one that I didn't change at all. A great tasting, easy, fast dinner. The best part is, the only things I needed to buy were the ground beef and the buns. :)

Raspberry Cheesecake Stuffed French Toast

Reviewed: Jun. 3, 2008
WOW! This was REALLY good. I've been wanting to make a stuffed french toast and I found the recipe i'll use from now on. I used strawberry jam since I didn't have raspberry and used a little bit less cinnamon (2T seemed a little excessive).
