Simple Scones
So easy and so delicious! The name suits this recipe well! I switched some ingredients to make this a bit more healthy. I used a food processor to mix the dry ingredients (but used less than 1/8tsp salt because there is salt in the spread I used), and then added Smart Balance Spread from the tub (8Tbl), and processed. Then I added yogurt/egg mixture, and processed. Then folded in the dried fruits. Baked at 400 for 15 min as the recipe stated, and the results were phenomenal! Simple and delicious! Definitely a keeper!

Truck-Stop Buttermilk Pancakes
This is THE recipe for pancakes! Although the batter was a bit too runny for my taste, the flavor was excellent! Delicious! The only change was that I did not have buttermilk and so mixed 2TBL vinegar with 2 cups of milk. I had this scaled down to 2c flour, 2c milk, etc., and had left overs! Next time, I think I will cut down the milk a little bit. Served this with a dolldrop of whipped cream, cut bananas, and grapes, drizzled with a little bit of syrup. Excellent! Even the non-pancake lovers admitted that this is delicious! Will definitely make again. Thanks for the great recipe.

Spanish Rice II
Excellent! I cut the salt in half, used a 14oz can of chopped tomatoes, added jalapeno instead of green peppers, and just used water. Came out delicious!
