Cilantro-Lime Dressing

Oh. My. God. This is soo good. I did everything according to the directions except I used half of the jalapeno, and reduced the EVOO to 1/3 cup. I made this as a marinade for chicken, but it tasted soo good just after I dipped my finger in to try it out! I definitely will make this again! (Oh! And I used 1 whole bunch of cilantro -- which I think is about 1/4 cup packed anyways!) Yum-o!

Pesto Pizza

Buffalo Style Chicken Pizza

This pizza is sooo good! I used just a normal generic brand of pizza dough you just add water to, Louisiana Hot Sauce, and let the cooked chicken sit in the mixture for about 15 minutes while I made the crusts. Instead of Bleu Cheese dressing I used Ranch instead (I like it better) I used a mix of Mozz cheese, italian, and cheddar cheese and sprinkled a little powdered garlic and italian seasoning on top. This was awesome! I also prebaked the crusts for about 5 minutes as some other reviewers recommended, and the dough was not soggy underneath at all! I cant wait to make it again and again. Thanks for sharing! I recommend shredding the chicken before you put it on the pizza so the chicken pieces arent too big and get spread out!

Baked Zucchini Chips

I thought these sounded like a great idea instead of the fried version. Once I made them - there was a lot left to be desired. I did it exactly according to the recipe instructions but it definitely was lacking taste. It could have used some more spices, maybe just garlic. The cooking time needs to be added to also, because 10 minutes was not enough. I kept them in for about 8 minutes on each side.. and even then they were barely done. They weren't horrible.. but I don't think I will try making them again anytime soon.. and I will read some suggestions in the reviews before I do!

Seafood Enchiladas

I liked it but it was very rich. I followed the directions exactly - and I think it could have been less rich and more shrimp added to the recipe because it was not enough! I would double to filling recipe!

Creamy Mushroom Pasta

The sauce didn't thicken like it should have so I ended up adding in more cornstarch than the recipe asked for. Also this recipe didn't make enough sauce, and I added a whole package of mushrooms in. I added more chicken stock and white wine to this recipe and it turned out pretty good. I just think the sauce should definitely be doubled for how much pasta there is.

Chicken with Garlic, Basil, and Parsley

This is one of my favorite quick meals to make. I usually leave out the crushed red pepper flakes though, I'm just not a big fan of them. This is easy enough though - and delicious!

Banana Pancakes I

I'm not really a pancake person - but I did like this. Instead of mashing the banana, I just cut into thin slices and dropped them into the pancake batter. Turned out really good! Oh! I also added about 1/2 tsp vanilla extract!

Garlic and Tomato Tilapia

Overall, this is a fairly easy and quick recipe. I definitely think Basil should have been added to the ingredients list though! And remember to spice the Tilapia good before you bake it, or it will be too bland. It's a keeper!

Easy Stroganoff

This was the best! I wanted to add onion to the ground beef but I didn't have any onion. I used a packet of onion and mushroom soup/gravy powder. Added that to the ground beef with about a cup of water. And then went on to simmer all other ingredients. It was definitely a favorite! It sure made a lot too! I added the sour cream in at the last minute and mixed it all together in a VERY large Tupperware container so it would be ready to be put into the fridge since there was so many leftovers! Great recipe!

Crab Rangoon II

I've made this a few times since I have found the recipe. I use pre-made won ton wrappers - they are pretty easy to find! Omitted the bok choy and snow peas. Add shrimp with the crab and put an extra splash of soy sauce in it as well as some garlic powder while also using the minced garlic. I love garlic! It turns out better every time! You just have to weed out what ingredients don't suit your taste and add the ones you like!

This was delicious, especially for such a short ingredient list! It made a lot too! I add cilantro to it - because I love the stuff! You can also make this with tilapia/shrimp.

Guacamole

Yum! I used 1 avocado and adjusted all of the other ingredients accordingly. Add garlic powder as well as garlic clove. Tossed in some extra cilantro as well! Oh! And I used lemon instead of lime.. I will make this every time we eat Mexican!

Cilantro-Lime Rice

I made this as a burrito filling. I pretty much doubled the cilantro stated in the recipe - because I love it so much! I also let the rice cook a little while longer because I found that the it was to stiff. Also I didn't add the chicken bouillon cubes. It was pretty good and went well with the black bean salsa filling and guacamole!

Zesty Herb Grilled Chicken

This stuff is the best. Make sure you use the thinner cut chicken breast, and you MUST grill these! Pan cooked is ok, but the grill really makes a difference!

Deep Fried Mushrooms

Followed recipes directions, and the end result was good. They were good for home cooked fried mushrooms. I had to add a bit of salt and garlic powder on top for more flavor though. Not bad. I'm going to continue to fool around with ideas on this one ;]
