Mom's Chicken Cacciatore

First time making cacciatore and I am wondering what I was waiting for! Absolutely delicious. I made basic changes to suit our likes, but did not change the bones of the recipe. Used chicken breasts (about 3 pounds), a 28 oz can of petite diced tomatoes, no mushrooms (so I used an extra pepper - will use 3 next time), olive oil for browning, red wine instead of white and added a few shakes of crushed red pepper. My fiance and I raved about how good this was. Looking forward to leftovers for dinner tonight!

Spanish Rice II

This was really, really good. Like others, I used chicken stock in place of water and added a pinch of cumin. I also subbed the tomatoes/chiles with 2 small fresh tomatoes and 1/2 of a jalapeno. Next time I will probably add the whole jalapeno for a little more kick.

Easy Sugar Cookies

Super Easy! I made these yesterday and while the dough was crumbly, i pressed it into a lipped cookie sheet, rolled it a little, and used big heart shaped cookie cutter. I made them egg free, using a powder and water substitute i have for my son, and they turned out great. The kids had a fun time putting icing and candies on them to celebrate Valentine's day. I froze the extra cookies and will be making these with cookie cutters for all holidays. Followed other reviews, only baked 8 minutes and they were perfect.

Slow Cooker Bolognese

I made this yesterday and we all loved it (including a 7 yo who doesn't like gravy or ground beef). This is the best recipe I have made on here in quite a while. I made almost as directed, but substitued meatloaf mix for the ground beef. I didn't have dried basil, so I used some italian seasoning. I think I added a bit less seasoning too. If I were making for myself, and not 3 little kids, I would kick up the crushed pepper. I removed the carrots/onion/garlic before I sauteed the meat. Cooked on low 4 hours, added remaining milk and cheese and cooked on low another 4. Served over fresh pasta. Will make over and over again!

Eggnog Latte

absolutely loved this as is. i used my small milk frother machine and it worked great. i don't have an espresso machine, but i used a Green Mountain Espresso Blend k-cup in my Keurig on the smallest setting. This recipe makes 2 glasses with only 1 k-cup.

Slow Cooker Buffalo Chicken Sandwiches

I gave it 5 stars b/c DH loved, loved, loved it! He is the bigger fan of buffalo wings around here. Used a 4qt crock, 3 lg. breasts and Frank's sauce. Super easy, moist and even DH assembled it while I was at work today. I used fresh chicken so it only took about 4 hours on low.

Slow Cooker Chicken Stroganoff

Very good dish and I'm not a huge fan of chicken in the crock. I used 1/2 envelope of italian dressing and mixed it with about 1/4 - 1/2 cup water first. I sprinkled the chicken with garlic powder and freshly ground black pepper too. Also used 1/3 red. fat cream cheese and 98% fat free cream of mushroom. Took 4 hours total in my 4 qt crock.

Banana Crumb Muffins

These were so delicious. I made them yesterday and they are all gone already. I added 1/4 tsp cinnamon to the batter and used Fleischman's unsalted stick margarine in place of the butter to keep them dairy free for my dd. I will make these all the time!

Double Layer Pumpkin Cheesecake

This is super easy to make and absolutely delicious. My husband actually asked where I bought it from! I've made it several times and the last time I mixed it all together. I think it had an even better taste, although you don't get the pretty presentation of the layers.

Slow Cooker Chicken and Dumplings

We all really loved this. I used 1 tube Pillsbury grands biscuits, 1 can red. sod. ckn broth instead of water (will use water next time for less salty flavor), 98% ff soup and seasoned ckn w/ adobo, garlic salt and pepper. I hand flattened the biscuits a little and cut into 9 - 12 pc. per biscuit. I also added about 1 c. frozen mixed veges per some of the reviews. Layered: onions, seasoned ckn, soup, veges, broth. Cooked 3 hrs. on high in a 4qt crock then took ckn out and shredded. Returned ckn and added biscuits, cooking 1 more hour. Will make all winter long. Thanks!

Teriyaki Steak

Loved it! I never made skirt steak before, but this was so simple and delicious. I used reduced sodium Kikkoman, 4 cloves of garlic and marinated it for about 10 hours in my foodsaver marinate container then broiled. Made it for our steak loving company and there wasn't one bite left. Served with homemade lo mein. Will make all the time now!

It's Chili by George!!

Great recipe for chili and will be our keeper from now on. I mostly followed the receipe as is, but used 3 cans Hunts diced tomatoes in juice in place of the tomato juice and 4 8oz. cans of Hunts tomato sauce instead of 28. I simmered about 2 hours, but next time I will probably add a half an hour. Added a 1/2 tsp more cumin too. Makes enough for a small army! I froze about 6 meals afterward - what a deal!
