Cara's Creamy Stuffed Shells

This is my go to stuffed shell recipe. I've made it countless times over the past few years, and every time I make it, it's a huge hit. Whoever I make it for always asks for the recipe. I do scale the recipe down to 1 pound of ground beef, 1 egg, and 1 jar of pasta sauce. I also use whatever cheese I have on hand.

Chocolate Eclair Dessert

This dessert was super easy, and equally as amazing. I did make a change, and I would highly recommend other people do this as well...I crushed the graham crackers and used a whole box. Some people commented that their graham crackers didn't get soft. If you crush them, and use the whole box, you won't have that problem. I also heated my chocolate frosting in the microwave for 1 minute, and then poured it on. The people I made it for raved about it. I'll definitely be making this again!

Chicken Pasta Salad II

Creamy Chicken Lasagna

Pizza Casserole

Yummy and very easy to make. I made a few changes, but as written, it would be 4 stars. I used bowtie pasta, because that's what I had on hand. I added basil, white pepper, and salt to the sauce mixture. I also doubled the cheese. Instead of mixing the pepperoni in with everything else, I layered it. I poured half the mixture into my casserole dish, layered pepperoni and cheese, and then poured the rest of the mixture in, and layered more pepperoni and cheese on top. It turned out fantastic, and I'll definitely be making this again.

Quinoa and Black Beans

I'm not quite sure what I did right, but mine turned out pretty watery. It had really good flavor...but texture-wise, it was pretty odd. I made it for just myself...but I'm not sure that I would've wanted to serve it had I had any guests. I may try it again if I feel like playing around with it.

Jen's Heavenly Egg Salad

I had a lot of eggs that I wanted to use up, so I was planning to double the recipe. However, after doubling the dressing, I still didn't have enough for 12 eggs, so I ended up tripling the dressing to get enough for 12 eggs. I didn't have a lemon, so I used 1 tsp lemon juice, and thought that gave it just enough zing. I also added 1 chopped celery stalk to add some crunch. Overall it has good flavor, and I'll be making this again.

Bacon, Egg and Cheese Sandwiches

Apple Strudel Muffins

1-Dish Pepperoni Cheese Pizza Bake

Very easy and quite tasty. I did have to add a little bit more water. I mixed the batter in a separate bowl, and then poured it into a 9x9 square casserole dish. Other than that, I followed the recipe, and I think it turned out great. I like that it's a good base recipe and you can play around with the toppings.

Pecan Pie Muffins

These were amazing! I did have to add a little bit of water, as it was too thick to pour as written, but otherwise, I followed the recipe. I don't have a mini muffin tin, so I used a regular size, and came out with 12 muffins. I used muffin papers, and didn't have any problem getting them out. I made these for my mom for Mother's Day and she LOVED them. I'll definitely be making these again.

Tater Tot Bake

I thought this recipe was good. I only made 2 changes. I used minced onion, and I added a veggie mix of broccoli, cauliflower, and carrots. I think it's a great base recipe and something I'll definitely be making again.

Homemade Butter

It was easy, and turned out fine, but actually more expensive than store bought butter, so I don't know that I'll be doing this again. I processed 2 cups of cream in the food processor for 10 minutes, then I scooped the butter out, wrapped it in cheese cloth and rinsed it thoroughly and pressed all the liquid out before putting it in a container. I got barely 1 cup of butter, and it cost me about $5 ($2 for the cream, and $3 for the cheesecloth).

Cranberry Applesauce Muffins

I thought these were very good. I made the recipe as written, and the batter was too thick to pour into the muffin cups. I added about 1 cup of water towards the end, and they turned out perfectly. I got 24 muffins.

Swiss Chicken Casserole II

I must've done something wrong...because I can't rave about this recipe like others. I'm giving it 3 stars because it did taste good. The chicken was juicy, and the swiss cheese and the cream of chicken soup gave it a good flavor. But, the stuffing was dry and crunchy and had to be scrapped off to make the chicken edible. I will try making this again, but next time I'll put the stuffing on the bottom so hopefully it will soak up some of the soup and cook.

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

I've made this recipe several times, and always get rave reviews. It is time consuming...but I love to cook, so it's well worth it. I do change a few things. I don't add the pimento. I never have it on hand. I dip the chicken in the egg, and bread crumb/pecans, and then stuff it with the broccoli/cream cheese mixture. Once stuffed, I don't brown the chicken on the stovetop. I stick it raw right in the oven and just increase the baking time. The chicken has always come out juicy and very flavorful.

Cheesy Amish Breakfast Casserole

I made this recipe as it's written with just 2 exceptions. I didn't have swiss cheese on hand, so I used colby. I didn't have an onion on hand, so I used dried onion. I wouldn't recommend making that substitution. The casserole tasted very good, but seemed like it was missing something (my guess is the onion). I'll definitely be making this again...next time with the onion!
