Spinach Cheese Manicotti

Reviewed: Apr. 13, 2010
Never made stuffed manicotti before and was amazed this worked out! Based on previous reviews - a few changes I made included reducing the water to 1C, adding fresh basil and dried Italian herbs. I didn't add the parmesan (sauce is already salty) and onion (when raw it's overpowering). Next time I think adding olives and artichokes would be a nice addition.

Outrageous Chocolate Chip Cookies

Reviewed: Mar. 28, 2008
It's hard to mess this up - I even eyeball the PB and it turns out delicious each time. I sprinkle extra chocolate chips on top of any bald spots.

Peach Coffee Cake II

Reviewed: Aug. 11, 2007
Thank you for sharing this easy and delicious recipe! I added an extra tsp of vanilla extract and substituted homemade plain yogurt for sour cream. I used frozen peaches thawed overnight and strained to remove excess juices. Leftovers are great for breakfast.

Cassie's Zucchini Brownies

Reviewed: Aug. 8, 2007
Versatile recipe! I used summer squash in place of zucchini, added an extra tsp of vanilla extract, and reduced the cocoa to 1/4C for a more milk chocolate rather than dark chocolate taste. Following the suggestions of others I added chopped pieces of a chocolate bar that a friend gave me from Germany into to the batter. It is more cake-like, but I not complaining. After baking I sprinkled on top about 1/2C of chocolate chips, waiting a few minutes before spreading the melted layer throughout. Next time I'll try a different chocolate bar.

Zucchini Egg Bake

Reviewed: Aug. 8, 2007
Superb recipe! I added crumbled bacon and fresh tarragon and omitted the parsely which can lend a bitter taste.

Finnish Pulla

Reviewed: Jun. 7, 2007
Great recipe! 1 Tbsp cardamom is essential to bring out the flavour and smell. It seems like a lot and the initial smell is overpowering but when cooked becomes a more subtle. Definitely, watch the oven. The tops were slightly burnt after 25 min but unharmed otherwise. I would bake for 20 min next time. Without the cardamom, the dough recipe lends the right texture to making cinnamon rolls or monkey bunch bread. A versatile recipe. Thanks for sharing it.

Mango Cardamom Bread Pudding

Reviewed: Jun. 5, 2007
Thank you for sharing this absolutely delicious recipe! I mix the cardamon with the bread and mango to ensure an even distribution then sprinkle somemore on top before baking. I have also used French and cinammon/raisin bread to rave reviews.
