Grandma Ople's Apple Pie

This is, by a landslide - the best apple pie around. I only make lattice crust tops for berry pies, so I covered this apple pie with a top crust with apple shaped cut-outs. For this reason, I poured the sugar/butter mixture over the apples before placing the top crust on. The apple filling will set once the pie cools. It's divine. Add some ice cream or homemade whipped cream and you've got yourself a blue ribbon pie!

Jewish Apple Cake I

Follow the recipe exactly and adjust your oven if necessary. I make this exact same recipe for my cafe and people rave over it - and keep coming back and ordering several at a time. In my oven at work - 77 minutes. At home, 60 minutes. Know your ovens, folks!

Polly Welby's Excellent Chocolate Mousse

Easy tip: Add some heavy cream to the chocolate while it's melting and use a whisk to blend it together. Then, place the melted chocolate/cream mixture in the refrigerator for a few minutes, stir and return to fridge for a few more minutes and then remove and stir again. Next, spoon a little of this into the whipped cream and use an electric mixer to blend together. Repeat until all chocolate is blended into whipped cream. No chunks this way. Now, I added a packet of unflavored gelatin to the melting chocolate to make the texture more "mousse-like" and less like pudding. I also added a little rum extract to the chocolate for a more authentic flavor. Very tasty.

Burgundy Pork Tenderloin

Tender, juicy, tasty...exceptionally good. My children loved it, my husband loved it, I loved it. I used celery seed since I had no celery and minced garlic since I had no garlic salt. Other than that, I followed the recipe to a T. I'm making it for 12 people tomorrow night, as it is the perfect "show off" entree to serve. We're having baby red potatoes and garlic roasted string beans on the side. Thanks so much for this delightful dish, Browndog!

Berry-Filled Doughnuts

I was skeptical, but now I'm a believer. These were amazing! I made them during Hanukkah and several friends asked for the recipe. Having made doughnuts for years, I will now throw away all other recipes and only use this one forever more. EASY and delicious. My only complaint? They don't last, so eat them within a couple of hours or less.

Raspberry White Chocolate Mousse

All four of us loved this. I didn't add food coloring, and I didn't add the orange liquer (didn't have any on hand). I added about a quarter to a half teaspoon of orange extract instead. The mousse was excellent and not too sweet (and I was really afraid it would be, as I usually don't love white chocolate for this reason). I divided it into four one-cup ramekins for four servings (recipe says 16, but they'd be quite small servings). Then, I put a few fresh raspberries on top, and drizzled a couple of tablespoons of the raspberry sauce over that. Then, I shaved some good dark chocolate over the top and it got rave reviews. Thanks Stacey! Very easy.

Sweet Bacon Crackers

I mixed cooked chopped bacon with the brown sugar and blended it all with cream cheese before spreading on the crackers (then no need to toast). Unbelieveably delicious. My husband saved some extra for his breakfast bagel.

Authentic Chinese Egg Rolls (from a Chinese person)

Excellent. I used what I had in the fridge - shredded red cabbage, shredded carrots, shitake mushrooms, green onions. No meat. I didn't add the MSG though, as the soy sauce was salty enough. Very easy. I quartered the egg roll wrappers and made bite-sized appetizer egg rolls. They were a big hit.

30-Minute Minestrone

This was very tasty, but I felt that beans needed to be added for substance, and also to reflect most of the minestrone recipes I've had. Minestrone has several variations - one of my favorites include sausage. I am the proud owner of two successful restaurants.
