Slow Cooker Latin Chicken

This is probably my favorite crockpot recipe ever. I used bone-in chicken thighs (skinned) and cooked it for 5 hours on high. I served it over cooked brown rice with fresh squeezed lime and chopped cilantro on top. Super easy and incredibly yummy!

Fudgy Chocolate Cream Pie

Wow, this was amazing. My husband loves chocolate cream pie and the only kind I have ever made is the pudding-in-the-box kind. He said this was the best chocolate pie he has ever had. It turned out super rich and chocolatey and set up perfectly! I followed the recipe exactly and the results were wonderful. Great recipe!

Prime Rib

We made this for Christmas dinner, and after following the directions exactly, we ended up with an almost raw piece of meat. After researching and reading the reviews, I think we determined the problem - it seems to not work with a gas oven. I think a gas oven cools off a lot more quickly than an electric one. Our roast was salvaged - we just turned the oven on 375 again and roasted it for about 45 more minutes and it came out fine. So, I would NOT try this if you have a gas oven.

Bacon-Flavored Dog Biscuits

These are great and my dogs love them. So, I just made two batches for an animal shelter bake sale! I rolled them out to 1/4 inch thick, cut them out with a tiny heart shaped cookie cutter, and baked them for about 18 minutes. It made a couple hundred and they turned out perfect. I did run out of whole wheat flour, so I substituted regular flour and wheat germ. It worked just fine.

Sweet Potato Souffle

I made this for Thanksgiving yesterday and it was a huge hit. As everyone else said in their reviews, even people who don't like sweet potatoes liked this! I did cut down on the amount of sugar in both the potatoes and the topping because all I had were canned sweet potatoes and they were packed in a light syrup. I was afraid it was going to be too sweet. I used 1/2 c white sugar in the potatoes and 1/2 c brown sugar in the topping. It turned out perfect! This will be a staple at every Thanksgiving now - SO much better than the boring old marshmallow topped sweet potatoes!

Basic Quiche by Shelly

Awesome recipe! I have never made quiche before and I'm very pleased that this is the first recipe I tried. I pre-baked the crust for about 8 minutes, as suggested by someone, and I also cut the 1/2 & 1/2 down to 1.5 cups and added an extra egg, since I like a less-custardy consistancy. For add-ins I used some shredded swiss, crumbled bacon, 1/2 package frozen spinach (thawed and squeezed VERY dry, and a small amount of carmelized onions. Amazing!!

Jiffy Cinnamon Rolls

These are really good, quick cinnamon rolls. Though, I followed the directions exactly and my dough was really soft - way too soft to roll out. Maybe because I used nonfat milk? Not sure. Anyway, I stirred in more flour (about 1/2 c) before kneading, and then the dough was perfect! The filling seemed to be the right amount - I was worried there wouldn't be enough, but it was perfect. Definitely remove these from the pan as soon as you take them out of the oven; I could see how they would stick if you let them sit in the pan too long. Excellent recipe - thank you!

Chocolate Covered Orange Balls

I made these yesterday afternoon and I'm glad I didn't rate them at that time, or I would have only given 4 stars. These are much better after they sit for a day. The flavor mellows and they aren't so sweet. I froze them, as a test, and they freeze very nicely. Per other's suggestions I added some shortening to the chocolate coating and they were simple to coat. I just put them in the choclate, lifted out with a spoon and used my fingers to transfer them to waxed paper to dry. The chocolate kind of melded in and covered my fingerprints. I also substituted pecans for walnuts. Very yummy and I'll be giving some as gifts.

Lemon Cupcake with Blackberry Buttercream

The combination of lemon and blackberry is superb and the little cakes with purple frosting look so pretty! As others stated, the cake recipe doesn't yield 24 cupcakes. I ended up with 15. It doesn't rise a lot, so if you fill the papers about 2/3 of the way, the cake should rise just to the top of the papers. The buttercream icing does seem a little sweet on its own, but as soon as you put it on the lemon cake, it's perfect! I would also like to try it with strawberry or raspberry jam next time.

Chicken Marsala

So good and super easy to make. I thought I had purchased a bag of frozen chicken breasts and it turned out they were thighs - I used this recipe and it worked just fine. I used a nonstick skillet and cut down on the fats by half.

El Dorado Beef Casserole

My gramma used to make this all the time, though with slight changes! Her variation: 1.5 pounds of ground beef, use a whole chopped onion instead of the minced and cook with the beef, 1 teaspoon garlic powder (not salt), 3 cans of tomato sauce, and add a package of taco seasoning to the beef/olive mix. Then just put a layer of the crushed chips, the beef mixture, then mix 1.5 cups of cottage cheese with the green chilis and spread that over the top and sprinkle with cheese (leaving out the sour cream). I make this in two 8x8 pans and freeze one before baking. It works great. Just thaw and bake as directed. The chips won't be so crunchy, so I just sprinkle more on top when it comes out of the oven.

Eggplant Parmesan II

This turned out fantastic! Per some of the other reviews, I salted the eggplant slices and let them sit for about 30 minutes. Then I rinsed and dried them really well before breading. Once breaded, I baked them for 10 minutes on each side. Really simple recipe and I will be adding it to my rotation!

Sesame Pasta Chicken Salad

Simple yet so good! The dressing is perfect, if, like other reviewers said, you reduce the oil by a little bit. I also added some matchstick carrots for a bit of crunch and to sneak in some more servings of veggies. This is something I'll make a big batch of and pack for my workday lunches. Yummy, easy, satisfying recipe!
