Southwestern Seafood Egg Rolls

Chicken Pot Pie VIII

Wonderful, easy recipe! I used pre-made pie crusts because I had some that I needed to use up. I also pre-cooked the potatoes, carrots and celery. It turned out perfect!

Addictive Sweet Potato Burritos

I have been meaning to try this recipe forever - and now I wish I would have tried it sooner! These are crazy good. I made a bunch and stuck them in the freezer so they will be available whenever I want them! :)

Hot and Spicy Pecans

Easy and good. I wish they were a tiny bit spicier though, so next time I will add more red pepper. I only had to cook them about 22 minutes and they were done perfectly.

Slow Cooker Latin Chicken

This is probably my favorite crockpot recipe ever. I used bone-in chicken thighs (skinned) and cooked it for 5 hours on high. I served it over cooked brown rice with fresh squeezed lime and chopped cilantro on top. Super easy and incredibly yummy!

Awesome Sausage, Apple and Cranberry Stuffing

I used this recipe yesterday- it's the first time I have ever made stuffing - it turned out perfectly! Since we were smoking our bird I wasn't able to stuff it, so I made the stuffing early in the day and put it in the crockpot instead. It worked wonderfully! I just stirred it every couple of hours so it wouldn't get too crispy against the sides of the pot, and it worked great! Everyone loved it. I left our the liver and used the sage Jimmy Dean sausage as someone else suggested. Great recipe!

Sweet Potato Souffle

I made this for Thanksgiving yesterday and it was a huge hit. As everyone else said in their reviews, even people who don't like sweet potatoes liked this! I did cut down on the amount of sugar in both the potatoes and the topping because all I had were canned sweet potatoes and they were packed in a light syrup. I was afraid it was going to be too sweet. I used 1/2 c white sugar in the potatoes and 1/2 c brown sugar in the topping. It turned out perfect! This will be a staple at every Thanksgiving now - SO much better than the boring old marshmallow topped sweet potatoes!

Mediterranean Pasta

I'd been meaning to try this recipe for a long time - now I wish I hadn't waited so long! The results are wonderful, and it's SO simple. It worked perfectly for me - I prepared it a few hours in advance and then put it in my crockpot on low to keep it hot since I'd have people in and out all night eating at different times. I'll definitely be adding this to my rotation!

We made this for Monday night football and it was well received. Next time I will shred my cheese a bit finer, since the big chunks made the texture a bit off. Everyone wanted the recipe.

Fudgy Chocolate Cream Pie

Wow, this was amazing. My husband loves chocolate cream pie and the only kind I have ever made is the pudding-in-the-box kind. He said this was the best chocolate pie he has ever had. It turned out super rich and chocolatey and set up perfectly! I followed the recipe exactly and the results were wonderful. Great recipe!

Basic Quiche by Shelly

Awesome recipe! I have never made quiche before and I'm very pleased that this is the first recipe I tried. I pre-baked the crust for about 8 minutes, as suggested by someone, and I also cut the 1/2 & 1/2 down to 1.5 cups and added an extra egg, since I like a less-custardy consistancy. For add-ins I used some shredded swiss, crumbled bacon, 1/2 package frozen spinach (thawed and squeezed VERY dry, and a small amount of carmelized onions. Amazing!!

Jalapeno Popper Spread

This is excellent dip! And just like it says - addictive! I mixed it up and put it in a mini crockpot on low. It worked out really well and everyone loved it! update: I've made this dip about 20 times now, because every time I get invited somewhere it's requested. Now I just take along copies of the recipe because I know everyone will ask for it. I've heated in the crockpot, baked it in the oven, microwaved it, and even heated in on the stove top and it turns out equally yummy every time. I do mix the parmesan in when i bake it, rather than leave it on top though - I like it a little better that way.

Chocolate Covered Orange Balls

I made these yesterday afternoon and I'm glad I didn't rate them at that time, or I would have only given 4 stars. These are much better after they sit for a day. The flavor mellows and they aren't so sweet. I froze them, as a test, and they freeze very nicely. Per other's suggestions I added some shortening to the chocolate coating and they were simple to coat. I just put them in the choclate, lifted out with a spoon and used my fingers to transfer them to waxed paper to dry. The chocolate kind of melded in and covered my fingerprints. I also substituted pecans for walnuts. Very yummy and I'll be giving some as gifts.
