About this Cook
I had two children by the age of 18, so I had to learn early on how to feed a family of four on a very low income. Now that I am getting older and my kids can help more in the kitchen, we are starting to learn more about cooking different foods and enjoying time in the kitchen. My oldest son especially likes to rate my cooking more than participating in the actual process, but that is okay with me. :)
My favorite things to cook
I always find myself falling back on the one pan wonders (skillet meals) and casseroles. It goes back to my routine of feeding many mouths on a budget. No matter what our grocery money is, up or down, I always fall back on these favorites because they are just good and familiar.
My favorite family cooking traditions
I don't have many family cooking traditions, so I am starting my own for my kids to remember. They will be always having home baked goodies on the counter and always sitting down together to eat dinner, no matter what.

J.P.'s Big Daddy Biscuits
I'm converted... WOW, these are good. I cut in cubed cold butter instead of shortening. I wasn't about to bother with freezing it and shaving it, and you don't need to either, they still turn out great. I went ahead and added the whole cup of milk at once and found it to be too much. After adding a little more flour the dough was beautiful to work with. I rolled it to 1 inch thick and use a cup to cut rounds. Baked them for 13 min. and they were HUGE, FLUFFY, YUMMY! I got 8 giant biscuits. I will never buy them from the can again...

Easy Sugar Cookies
These cookies are awesome! I made them exactly as written and the whole family ate them up. I took them out of the oven at 8 minutes and they were soft and chewy. I used my cookie scoop that holds 1 1/2 TBS of dough. Yummmmm!!! I will be adding these to my holiday cookie baking this year... :)

Awesome and Easy Creamy Corn Casserole
I made this casserole based on the rave reviews and normally I love everything from this site. This, however, was the exception. I love corn, my kids love corn, my husband loves corn... we all hated this. I followed the recipe to a T, but it just isn't tasty enough as it is... maybe if I added cheese and bacon or chopped chiles as others have suggested it would be better, but as is I wouldn't make again. :(
