Mom's Zucchini Bread

YUM-MEE! Bought a couple of nice zucchini today just so I could try this recipe. Glad I did! Husband and his friend and I all gobbled up two slices each while still warm. I may try adding golden raisins next time for variation. Loved the crusty end pieces and top!

Christmas Breakfast Sausage Casserole

I have been making a variation of this recipe for about 20 years. The differences are that instead of bulk sausage, mine uses 2 lbs. link sausage, which is browned in the oven at 325 'til done. Also adds one large can sliced mushrooms (or 8 ounces fresh), 6 oz. sharp cheese instead of 8 oz. mild (more flavor), and one can of cream of mushroom soup combined with 5 ounces evaporated milk. The milk is poured over the casserole the night before and the soup mixture is spread over the top just before baking. Wouldn't be Christmas morning breakfast without this dish! :)

Tropical Salad with Pineapple Vinaigrette

I made a double batch of this for a party. While it was tasty, it was very soggy - perhaps because of all the juice from the pineapple? I would probably cut the dressing down by half next time. The combo of pineapple and bacon was yummy. The cost to put this together was a bit pricey though. Macadamia nuts at $13/lb., whole pineapple $4, bacon $4, etc. Something to keep in mind! :)

Hot Tamale Pie

Made this as written but halved it and baked for 30 minutes instead of 50-60. Bottom was a little soft but top was perfect. Might try to cover with foil and cook a little longer. Used Herdez mild salsa which had plenty of flavor. I also sprinkled the meat mixture with a dash of granulated garlic at the last minute. You could spike it up by using medium or hot salsa. Very tasty without a lot of effort and easy enough for a weeknight dinner. Not 'to die for' but certainly a real keeper.

Wild Mushroom Sauce

This sauce was absolutely incredible! I bought all the mushrooms listed with exception of the morels (they are just too expensive!) Also, we didn't have Demi Glace and weren't sure what it was so we wing'd it by using rich beef stock with a packaged brown sauce. I'm sure REAL Demi Glace would've knocked this recipe off the charts, but the packet gravy/sauce mix still had wonderful results. A definite keeper!

Marinated Flank Steak

This recipe is a real keeper. I didn't have time to marinate for the full 6 hours and it still came out delicious. I also broiled mine in the oven 5 minutes on each side and served Wild Mushroom Sauce (also on this site) with Portabella Mushroom Ravioli. Wonderful combination of flavors. We will definitely be using this marinade over and over.

Asian Ground Beef and Pepper Saute

I made this recipe initially by modifying to make it Vegan for my vegan sister and her husband. I used the soy protein "gound beef" and vegetable broth and it was fantastic - much better than I thought it would be. I have yet to make this using ground beef... but instead prefer ground pork or ground chicken. I use a little more ginger and garlic than this recipe calls for and add water chestnuts for extra crunch. A great recipe that can be made with whatever you have on hand in your vege bin!

Thai Chicken with Basil Stir Fry

I was craving Thai when I searched for and found this recipe. It's quick to make and fairly authentic-tasting. I used Trader Joe's basil (easy to get and the best deal in town!) and light coconut milk. The amount of red pepper flakes was just the right amount of spice for me and my husband. I sent this recipe to my sis in Seattle, who made it the next day and gave the same rave review :) I'd like to try it with red bell pepper, as another reviewer did. Definitely a do-again recipe! Yummy!
