Mom's Zucchini Bread
YUM-MEE! Bought a couple of nice zucchini today just so I could try this recipe. Glad I did! Husband and his friend and I all gobbled up two slices each while still warm. I may try adding golden raisins next time for variation. Loved the crusty end pieces and top!

Christmas Breakfast Sausage Casserole
I have been making a variation of this recipe for about 20 years. The differences are that instead of bulk sausage, mine uses 2 lbs. link sausage, which is browned in the oven at 325 'til done. Also adds one large can sliced mushrooms (or 8 ounces fresh), 6 oz. sharp cheese instead of 8 oz. mild (more flavor), and one can of cream of mushroom soup combined with 5 ounces evaporated milk. The milk is poured over the casserole the night before and the soup mixture is spread over the top just before baking. Wouldn't be Christmas morning breakfast without this dish! :)

Tropical Salad with Pineapple Vinaigrette
I made a double batch of this for a party. While it was tasty, it was very soggy - perhaps because of all the juice from the pineapple? I would probably cut the dressing down by half next time. The combo of pineapple and bacon was yummy. The cost to put this together was a bit pricey though. Macadamia nuts at $13/lb., whole pineapple $4, bacon $4, etc. Something to keep in mind! :)
