About this Cook
My favorite things to cook
I LOVE making soup! I also enjoy baking.
My favorite family cooking traditions
My mom makes an incredible meat stuffing at Thanksgiving time. My family is Italian...used to love my grandmother's "salt & pepper pizza" along with her wonderful homemade gnocchi. Her pizza was always amazing too with a thin layer of sauce and just a hint of cheese...somewhat like a "tomato pie."
My cooking triumphs
Making great soups.
My cooking tragedies
Back when I first started cooking, I bought a bean-soup kit. The recipe for the kit called for green chilies. It stated "14 oz green chilies." I thought that sounded like a lot but I dutifully bought 4 cans of 4 oz green chilies and dumped them in. Sure enough this was WAY too much and made the soup inedible and was way too spicey. Lesson learned - I now listen to my instincts more. :)

Chicken and Broccoli Braid
I love making this and it is in my regular dinner rotation now. My 13-year-old daughter loves it too. I have made a couple of changes, just based upon personal preference. I do not add almonds. I add peas and about 1/2 cup of cream of chicken soup, which seems to give it a good flavor. I also add fresh black pepper. One other thing I tried tonight when I made it was cook the broccoli for just about 5 minutes before putting it in the mixture, just so it isn't as crunchy. Delicious! It will remain a staple in my family. Makes great leftovers for lunches too.

Slow Cooker Bacon Potato Chowder
Sorry but this recipe calls for WAY too much cheese! I should have only added a little bit at the end because 2 cups of cheese makes this SO thick that it turns out more like a dip than a soup. The soup is good without the cheese so next time I make this I will only add a little cheese or omit it altogether. It does stick to the bottom of the slow cooker so I would suggest using a slow cooker liner.

Slow Cooker Texas Pulled Pork
Decent. I think next time I would omit the thyme, it does not match the flavor profile and adds a bit of an "aftertaste." Otherwise fairly happy with the results, sauce consistency is decent (maybe a little on the thin side) and has a nice smokiness to it.
