Taco Soup II

Seriously, this is my favorite food. Ever. My mom always made it when I was little during the winter. I just made it again, and the best thing with this recipe: use your favorites! I put corn in it instead of lima beans, and I used jalapeños instead of chili peppers. I also made my own taco seasoning from a recipe on here (I think taco seasoning I) instead of the store package (I'm really big on my food being organic). I didn't add the ranch package either. Making my own seasoning made this even better than I could imagine! I love it with cheese and sour cream. Mmm, it's my guilty pleasure. And since there's only 2 of us here, this is enough for me to have dinner for a week or so, it's so good I don't mind eating it for days on end!! My boyfriend who hates beans even loves it! :)

Chicken Cordon Bleu I

MMMM mmm! This is my 1st time ever cooking anything besides mac-n-cheese, and I was so proud! This was extremely easy and it looks wonderful. The chicken breast came out PERFECT, it was so tender and juicy. I followed the recipe exactly, too.

Grilled Corn on the Cob

Mmmm, I thought about soaking them in water or using a towel, but I cooked them just as the recipe says. Very juicy and tender! I'll definitely grill corn more often, it was very easy!

Homemade Chicken Parmigiana

This is the first time I've fried chicken, and it turned out great. Only changes I made were substituting the heavy cream w/1 tbl. butter & 3 tbl. of milk and I used finely crushed Ritz crackers for the breading (which was wonderful!). We had leftovers for the sides, but next time I'll definitely make it with pasta b/c this recipe makes a lot of sauce. I also might blend the tomatoes as others have suggested to make it smoother. This is probably going to be a regular from now on!

Broiled Tilapia Parmesan

This recipe is absolutely wonderful. I am not a huge fan of fish, but I know of its health benefits, so I'm trying to eat it more often. This recipe was very easy, and takes no time at all to prepare. I think this is the solution to eating more fish for me and my boyfriend loved it as well!

Broccoli Rice Side Dish

I thought it had way too strong of a rice taste. I used brown rice, which is all my mother had on hand, so maybe that's why. I'll try again w/white rice sometime and see if it's better.

Alice Chicken

I used to always get this at Outback. This was easy to make, and very good! I cut back on the fat by leaving out the bacon, and I used reduced fat cheese. This makes it much healthier, yet it's still delicious! The chicken came out very tender and juicy, partly because I marinated it overnight.

Broccoli Salad IV

Amazing taste! I'm just now growing out of my fear of raw onions, and this was a good way to get used to them. I didn't use all of the mayo and sugar, either. Basically, I just put in the ingredients eyeing what I thought was good. It's a great combination of flavors and I'm going to make this regularly!
