Beet Salad with Goat Cheese

I can't believe it! We love this! What a great way to use beets! I boiled them with the skin on for about 30-35 minutes. When they cool the skin slips right off.

Soft Oatmeal Cookies

I love the cinnamon in this recipe! We have done with plain, with raisins and with chocolate chips! They were all good! I also flattened out the little balls and put them on a cookie sheet lined with wax paper to freeze and baked later. It worked great! (I did not refrigerate the dough first)

Grilled Tilapia with Mango Salsa

So great! It was waaaay too cold to grill here, so I baked it in it's marinade. Was a bit worried about so much pepper, but it was great! The salsa was good, but the next day it was great--so I will make it a day ahead next time if I get a chance.

Best-Ever Chocolate Cake

My family and friends raved over this! It is so easy and basically one bowl to clean. For a b'day I added chopped peanuts and sliced bananas between the layers and it was a hit!

Best Ever Banana Bread

This was soooo moist! The second time I used 1/2 applesauce for 1/2 of the oil, and 1/2 whole wheat patry flour and it was just as good! I used 3 small pans instead of one large, and it still took almost an hour to cook. It doesn't raise real high, but it is delicious!

Feta Cheese Turkey Burgers

We loved this! Thanks to the reviews I was careful to not overcook them and they were very moist and the flavor was great. Even our six year old who turned up her nose at them ended up liking them! We added a slice of tomato and some lettuce and they didn't need anything else!

Our family really liked this, alhough mine didn't hold together as well as I liked so I might play with the mixture a bit next time. We used a little seasoned mayo, tomato and lettuce to top them off!

Spanish Rice II

this was good, quick and easy! I only had plain canned, diced tomatoes, so I added a bit more chili powder to make up for the flavor. It was good without, but bet it would be great with the tomatoes called for in the recipe!

Pollo Fajitas

We loved the chicken--although I made a few changes. I left out the worcestershire sauce and added lemon and lime juice and some chopped onion to the marinade. The soy sauce did give it an asian flare, but it was still really good--those looking for true mexican won't like it which is why I gave it a 4. We grilled the chicken strips and used the extra on a salad the next day!

Annie's Fruit Salsa and Cinnamon Chips

our family loves this, and it's popular wherever we take it! I do not add raspberries (although I will try it that way sometime!), and leave out the white sugar. I add a bit of orange zest and use apricot preserves. I also spray the tortillas with a spritx of olive oil, then the sugar/cinnamon.
