Mini Ham And Cheese Rolls

I have made these again and again and they disappear! I use the Hawaiian Sweet rolls and they are WONDERFUL! Assemble ahead of time and pop them in the oven when guests arrive. EASY!!!!

Grilled Greek-Style Zucchini

This sounded really good, but I didn't have some of the ingredients on hand so I improvised. Per prior suggestions, I chunky cut the zucchini and did not enclose it in foil on the grill. I used olive oil instead of canola, didn't have as many olives as the recipe called for and used red onion instead of green. Everything else was as directed. VERY good!! We put the finished product over a bit of cooked pasta and it was a wonderful side dish. I bet feta cheese would be a good substitute for the parm cheese. Will make again!

Sopapilla Cheesecake Pie

This was terrific - huge hit with discriminating gourmets! Made as written - except used regular vanilla and not Mexican vanilla as called for. NOTE: Some Mexican vanillas are toxic - read up on it before using. Super easy recipe - great as a take-along dessert. I cut into 24 pieces and that was plenty for everyone as it is a very sweet dessert.

Asparagus Side Dish

Made this last night for a New Year's Eve dinner - super easy, very very tasty and pretty on the plate to boot! I used two bunches of asparagus, about 3/4 pint of tomatoes, oil and 1/3 cup cheese. No salt or pepper. VERY good - will make again!!! Just 5 people almost ate it all up!! Tip: When steaming the asparagus, steam slightly underdone as it will keep cooking during the few minutes that the cheese melts. Also, drain off the water real well so you don't get watery cheese.

Easy Toffee Bars

Tasty and not super difficult. I used "Release Reynolds Foil" and did not have a sticking problem. I would suggest setting the timer about 5 minutes shorter than recommended - and keep an eye on it. Sugar burns quickly! Do not skip the cooling step! I tried plain, pecan-topped and peppermint. The peppermint did not go over very well at my party but the other two varieties were gone! I will make again!

English Trifle

This was very easy to make and tasted great. I used raspberries instead of the cherries on top - it seemed to go better with the other fruit. I also suggest not letting the pudding set so that it soaks into the cake cubes better. Nice dish to take somewhere - looks mor complicated than it is!

Cha Cha's White Chicken Chili

This was VERY good! I browned the chicken in a pan and then cubed it and put it in a crock-pot. I also followed some suggestions of others: used cornstarch to thicken and pureed one can of beans. I also had most of the jalepeno as a "side" item as well as the cheese. I will be making this again!

Sausage and Apple Stuffing

Great! I used a bit more onion and celery and used pecans instead of water chestnuts. Very moist. I was able to assemble a couple of hours ahead of time, keep in the fridge, and then pop in the oven 1/2 hour before dinner. Served 8 and still plenty of leftovers.

Black-Eyed Pea Chowder

THIS WAS GREAT! I had this for a New Year's Brunch and it was a huge hit! I "constructed it" two nights before in a crock pot and kept it refrigerated until New Year's morning. I had the recipe scaled for 12, and omited one of the cans of tomato so it would fit into the crock pot. It was WONDERFUL!!! I will be making this again!!! (Just finished the leftovers tonight!)

Cranberry Swirl Coffee Cake

Great flavor, pretty easy but I didn't have enough batter to do three layers. Had to have one layer of batter, one of cranberry (half a can) and then topped it with the remaining batter. I used a fluted pan and it came out real easy. I might try again. I think an icing glaze on it would be great. It was a little dry.

WOW! Great recipe! Made it the night before and was easy. A little soggy - I'll try putting it on the bottom rack like another reviewer did. Great for a brunch. I also used extra bread and it was fine. I'll use again!

Caribbean Holiday Shrimp

Nice, mild flavor that doesn't mask the shrimp. EASY!!!! Added bonus: Marinade can be made the night efore and then added to the shrimp right before entertaining! I will use this again!
