About this Cook
Originally from NY, have lived in Maine, Carolina, different parts of Texas, Mexico City, Puerto Vallarta and now in Tlaxcala, the smallest state in Mexico. Love to cook and learning from other good cooks. I also like good family food as well as the challenge of making something elegant for special occasions. My major pet peeve is too much cumin in The Mexican Food recipes on this site.
My favorite things to cook
Any kind of Shrimp, Stuffed Pork Loin, Filet Mignon, Scallops, Cheesecakes, Fruit Mousse Pies, Mexican Leg of Pork (pierna), and experimenting with chicken breasts.
My favorite family cooking traditions
Grasshoppers on New Years Eve, Scratch Eggnog on Xmas Eve, Shepard's pie the day after roast beef,
My cooking triumphs
Coquilles Saint Jacques got me a job teaching cooking. Was voted best beans at a Mexico City potluck dinner. Vanilla ice cream in almond meringue cups. Medallions in a chipotle-bleu cheese sauce.
My cooking tragedies
Made a "perfect" 14 inch family recipe cheesecake and discovered that I'd forgotten to add the sugar when the dessert was served!

Mexican Chicken Soup
This is a pretty good recipe for Chicken Soup. However, I have lived in Mexico for the past 18 years and there is one thing that ruins this soup for me. Two teaspoons of cumin!! I could accept a dash of cumin, but with 2 teaspoons of cumin, it tastes like cumin soup with chicken added. I do not understand the idea that all Mexican food has to have cumin in it. I made this soup and invited Mexican friends to try it. Nobody would eat it. Everything else (the avocado, tortilla chips, even the cheddar cheese) which are not commonly found in Mexican chicken soup would have been very acceptable, if not welcome additions. Just NOT the cumin.

House Fried Rice
I hate to say this, but this is a terrible recipe. Just to begin, how can this be fried rice, when the rice isn't fried? Then, cooking shrimp and already cooked meats first and to continue cooking with the vegetables, makes no sense. There are other, much better recipes for fried rice on this site.

Easy Fried Eggplant
Good basic recipe... agree that plain bread crumbs need a boost.
