Ten Minute Enchilada Sauce

Reviewed: Mar. 26, 2013
Exactly what I needed tonight for my enchiladas. Only one thing--I skipped the flour. And just a question--why on earth would you use self rising flour in a sauce?!? That is ridiculous!

Bake Sale Lemon Bars

Reviewed: Jun. 10, 2011
I have been making this recipe for years (this is the same one that is in my grandmas old cookbook) and have had no issues...I don't know what everyone else is doing wrong, but they turn out fine for every time. The only thing I change is the temperature to 350 (that's the temperature in the cookbook). My friends tell me of all the things I make, these are some of their favorites. I encourage you to give the recipe a try just as written.

Mexican Rice II

this recipe was perfect for me because I was making it for a family who was not big into very spicy food. I just doubled it and it turned out well.

Flourless Peanut Butter Cookies

Reviewed: Jan. 23, 2011
Excellent! I made these for a family who has Celiac's disease. I doubled the recipe--used a whole jar of peanut butter, 2 cups sugar, and 2 eggs. I also added a splash of vanilla. Super delicious, and probably the easiest cookies I have ever made.

A-Number-1 Banana Cake

Reviewed: Aug. 27, 2010
PERFECT! Don't change a thing, seriously. The only thing that should be optional is walnuts, especially if this cake is being served to people with nut allergies.

Rich and Simple French Onion Soup

Reviewed: May 25, 2010
One of the things I like to rate at every restaurant I go to is the French Onion soups. This is way up there with some of the best I've ever had. I didnt have sherry so I used white wine, and I didnt have thyme so I used oregano. Had a blast melting the cheese on top!!! Thanks so much for a perfect French Onion Soup Recipe!!!

Easy Pie Crust

Reviewed: Mar. 19, 2010
I put all my ingredients on the pie plate I was using, mixed them in there, and pressed the crust to the sides of the pan-simple and clean looking. Mine was a little greasy...Much easier than shortening crusts, but I think shortening is worth the extra effort....flakier crust, definitely.

Quick and Easy Alfredo Sauce

Reviewed: Feb. 7, 2010
good! It took kind of a while to thicken, so I added a little more parmesan cheese to help speed things up a little. Definitely stir often, or this will scorch on the bottom of the pan. I used this both on pasta and as the alfredo sauce for Artichoke & Spinach Dip Restaurant Style. Very yummy :)

Curried Coconut Chicken

Reviewed: Dec. 28, 2009
YUM!!!! My family (especially my mom) and I LOVE indian food, and this tasted just like the stuff we had at an authentic Indian restaurant the other week. I DID change a few things though, mainly because of a lack of ingredients. I did not have coconut milk, so I used toasted flaked coconut. I skipped the tomato sauce, since there would be no creaminess of the milk to balance out the acid and tomato-y taste- I didnt want the tomatoes to mask the yummy curry flavor. I drained the tomatoes and skipped the sugar, since the flaked coconut was very sweet. Finally, I cooked the onion, garlic, and curry powder a little longer to release a little more flavor. I'm sure that when I have all the right ingredients next time, this dish will taste even more heavenly! For all of you wanting a relatively simple Indian dish, I certainly recommend this one. By the way, Cook Stephanie's review was very helpful to me in my minor alterations :)

I added a little more cinnamon- but I agree with others in that this is more of a cake than a bar- maybe cut down on the baking powder

Mrs. Sigg's Fresh Pumpkin Pie

Reviewed: Oct. 9, 2009
Can't go wrong with a pumpkin pie in the fall, especially one as good as this one. I cooked it in the microwave and then tried blending it with a hand-mixer-didn't work, so I put it in the blender. Perfect!
