Egg in a Cup

This was surprisingly good. I eat eggs every day for breakfast and will be adding this to my recipe box. As someone else mentioned, I cracked my eggs into about 2-3" simmering water and poached them for 3 minutes. Scooped out with a slotted spoon right into the cup. I used 4 saltines as suggested and it was perfect!

Sun-dried Tomatoes I

Excellent Although I picked 500 cherry tomatoes for this recipe and iit reduced down to 2 small ziplock bags, I don't regret it. The end results were excellent. Easy to do as we'll. as others have stated, make sure the tomatoes are removed from the oven whole still somewhat leathery

Zucchini Pie III

This was fabulous. Don't forget to peel the sues and cut them to the same size you would apples. Don't slice them, chunk them for nicer consistency. Cooks up so the zukes are still firm but tender. Might put in 3/4 to 1 cup sugar instead of just 3/4 cup...

Louisville Rice Salad

This is a nice light side dish. Added peas, red onion, red pepper, and mango. Served with salmon. Very nice

Bud's Potato Salad

Good but need to cut the sugar to 1/2 of what the recipe calls for. Was too sweet. Start with 1/4 of the sugar called for and add until desired sweetness
