Chewy Brownie Cookies

These are the best cookies we have ever had! I omitted the nuts since my kids and husband really don't like them, but the cookies were still out of this world. They are so easy to make and the baking time is short, so that's a plus. I will make these over and over again!

Marshmallow Popcorn Balls

Very easy! I used my air popper for the popcorn and added 1/2 cup of brown sugar to the marshmallows and butter. This made it taste more like caramel. I make these all the time. So yummy!

Soft Caramel Corn

I have tried all sorts of recipes for caramel corn lately. My mom made soft caramel corn when I was younger, but it requires golden syrup I cannot buy around here. I really do not like crunchy caramel corn. It reminds me of the boxed stuff. No thanks! This recipe was super easy and I was 100% pleased with the result. Better yet, I don't have to bake it! I did add some peanuts, though. When this caramel corn cooled down, I put it in small zipper bags and stuck them in the freezer. I can grab one for a snack, but I usually share it with the entire family. We all love it!!

Mrs. Sigg's Snickerdoodles

I have never really loved snickerdoodles, but I now change my mind. These cookies were so easy to make and they are better than my favorite sugar cookies. I baked them exactly 8 minutes and mixed them by hand. Snickerdoodles cannot get any better than these!

Chewy Caramel

I made these last week and they didn't last 3 days. I gave several away and my husband and kids ate the rest. When I cooked the mixture, I had to increase the temp to 254 because it was way too soft otherwise. These are better than the caramels we used to buy in Canada on special trips.

Peanut Butter Cup Cookies

My mom used to make a similar cookie to this when I was a kid. But these are way better. I stuck the peanut butter cups in the freezer before placing them in the cookies. I like my cookies a bit underdone, so I baked them for about 7 minutes. I ended up with about 50 cookies and I don't think they lasted 2 days! We love them!!!

Mustard Vinaigrette

I think this is a great vinaigrette, but I made some changes that make it the best! Use less vinegar - with the mustard, it is too tart. I also doubled the honey since the vinegar needed something to counter balance it. I also added more mustard to achieve that mustard taste. After all, it is a mustard vinaigrette. Since extra virgin olive oil is better for you, I substituted it for the vegetable oil. If you are not used to EVOO, then this substitution may come to a surprise when you taste it. This also stores in the fridge for days.

Fried Razor Clams

I made this and thought it was excellent. We dug our own razor clams on a beach in Alaska and cleaned them ourselves. What a chore, but you have to do it right, or the slightest bit of clam guts could ruin a whole batch. I fried these up with a little change in the ingredients. I added some corn meal because I love the corn battered clams. It was flavorful and a hit with everyone, even my boys - 4 and almost 2 - who would have thought? I found it works best if you fry them hot and quick. They don't turn out rubbery and they are very tender. Thank you for sharing this recipe. I will use it over and over again.

Cheddar Buttermilk Biscuits

Wow! Great buscuits! I did add some garlic salt to this, but it was so easy to make. My husband and kids ask for this over and over. I didn't even roll them out and cut them. I just formed little patties and put them on a pan. Perfect buscuits every time!

Brilliant Sauteed Broccoli

This was great! I love the sweet and savory the brown sugar and parmasean bring to the broccoli. I am not a big fan of spice, but my husband is, so he loved it. This is a much healthier option than a heavy cheese sauce. Thanks.

Leftover Turkey Spring Rolls with Cranberry Sweet and Sour Dipping Sauce

WOW! I was tired of the old leftover turkey recipes and this one completely blew them out of the water. The combination of ingrediants for the make up of the spring rolls seems simple, but when put together, this Asian inspired appetizer is simply amazing. I will make this over and over with all of my left over turkey no matter if it's the day after Thanksgiving or any time of the year.

Actually Delicious Turkey Burgers
