I'm an Army wife and mother of one, soon to be two! Majoring in Sociology and Anthropology, with interests in Psychology and the Fine Arts. I'm Filipino/Caucasian, a former military brat, and former member of the US Army.

Asian food (especially Filipino) and Southern food. I love to cook Italian and Mexican for my friends, try new cookie recipes, and absolutely adore making bread by hand.

Oh, there have been many of those... Luckily it hasn't been when I've had guests to cook for or during the holidays!

Shrimp and Crab Casserole
Great base recipe. I made some changes: 2 boxes cooked rice-a-roni (used a cheese and a broccoli one I think) 12 oz artificial crab meat 12 oz frozen shrimp, thawed 1 cup miracle whip 1 cup mayo 1 cup chopped onion 1 cup chopped celery 1 cup chopped bell peppers 1 cup cream cheese Omitted Milk (already cooked rice) Omitted Almonds (none on hand) enough crackers to cover top Followed recipe directions, with the obvious modifications. This was a HUGE hit with my daughter, husband, a friend and her three (very picky) kids!!

Chewy Coconut Cookies
Seriously, these are some of the best cookies I have ever had - the perfect balance between sweetness and buttery flavor, crispy edges and chewy centers. They are also ridiculously easy to make. They look beautiful and are perfectly round with minimal effort. I brought them to a party and they were a huge hit. Will make these again and again!

Spicy Chicken Enchiladas
I modified the recipe using the following, which is what I had on hand. These are definitely "Americanized", but that does not immediately equal bad. * 1 package Rice-A-Roni Spanish Rice, cook as directed (ingredients listed below) * 14.5oz can diced tomatoes with green chilies (I used Del Monte diced tomatoes with zesty mild green chilies) * 2 cups water * 1 tablespoon vegetable oil ---- * 1 pound ground turkey * 1 small chopped onion * 1 tablespoon fresh minced garlic * 1 fresh jalapeno pepper, chopped * 10oz can enchilada sauce (I used Old El Paso green chile enchilada sauce) * 2 cups shredded sharp Cheddar cheese * 12 flour tortillas Overall this recipe is good for what it is.
