Pesto Chicken Penne Casserole

Reviewed: Aug. 18, 2013
This Is truly a great recipe. I've made this about 5-6 times and it's a hit every time with my family. The only modification made was replacing regular crushed tomatoes with a can of Rotel...that's it! Thanks for sharing!!

Quick and easy meal! I used boneless chicken breast tenders, added cajun seasoning, garlic powder and pepper to the mayo. The family was pleased.

Cafeteria Carrot Souffle

Reviewed: Oct. 1, 2007
I absolutely loved this! It turned out exactly like the Carrot Souffle @ Piccadilly's. The only change that I made was using 1/2 cup of brown sugar and 1/2 cup of white sugar. Thanks!

Sweet Potato Casserole II

Reviewed: Sep. 9, 2007
This was soooo good! My 2 yr old and mom were especially crazy about this casserole. What's funny is that I actually used canned sweet potatoes (2 29oz cans). Also, instead of pecans, I added marshmallows to the top. Yummy!

Penne with Shrimp

Reviewed: Sep. 2, 2007
Great recipe! Every time I dine out, I'm always looking for a good shrimp pasta dish. I was happy to find this recipe! I sauteed mushrooms and green onions along with the onion and garlic. I used a little extra white wine and added in some garlic powder, black pepper and a little crushed red pepper. Once I tossed it with the pasta, I felt that it was still a little bland and missing something. Guess what? I three in 3/4 jar of alfredo sauce during the last five minutes. THe end result = PERFECT SHRIMP PASTA DISH!! Thank you so much for sharing this one!

Chicken With Mushrooms

Reviewed: Aug. 30, 2007
This recipe was nice and easy, but it felt like something was missing once I got a taste of it. I did like others and sauteed the mushrooms in garlic first. I added extra seasoning to the bread crumbs and I didn't add the cheese until like the last 15 minutes. I will try this again and try to add more spices. Thanks!

Best Peach Cobbler Ever

Reviewed: Aug. 18, 2007
A++++ Wow, this actually was the BEST peach cobbler ever! I took the advice of others and sprinkled brown sugar along with cinammon on top. This created a slightly crunchy crust. Mmmmm! It wasn't runny at all, due to the fact that I remembered to SPOON the peaches into the dough. I wil be making this for the next potluck! :-)
