Spicy Sweet Potato Soup

Reviewed: Feb. 25, 2012
This was fabulous!! It smelled so yummy while cooking! I did not have creamy peanut butter, so I used crunchy instead, and added it before I blended with the immersion blender. It gave the soup a little bit of texture/crunch, which I LOVED. I always miss texture in pureed soups, so I probably will deliberately use crunchy next time I make it.

Spinach Appetizers

Reviewed: Aug. 13, 2011
Wow, these are delicious!! I used fresh spinach since I had it on hand and I used olive oil instead of the butter and they were soooo yummy with cocktails! I skipped the "freeze" step to go head and cook about half of the recipe. The other half, I am going to leave in the freezer to have on hand in case people stop by or if I need a quick appetizer. Next time, I might add some additional herbs and/or spices and maybe try some other cheeses (mozerrella, swiss, etc) I am so pleased I found this recipe!

Turkey, Ricotta and Whole Wheat Pasta Bake

Reviewed: Jun. 9, 2011
This was WONDERFUL! I have to admit, I love to read recipes but I seldom follow them exactly. I like to get ideas. This one I actually followed pretty closely except I only used about half a pound of ground turkey and I used fresh mozzarella and then I added some fresh basil and oregano from my garden. Oh, and I used a can of stewed tomatoes since I didn't have the Classico. I can't wait to make this with a couple of fresh tomatoes! Oh, another thing...I didn't precook the pasta...I sauteed the turkey, onions, garlic then added the tomatoes, ricotta, herbs, a little extra water to the skillet, brought it to a boil, then poured the whole thing into a casserole, and cut up the mozzarella balls on top. Yum yum, great flavors!

Oven Brown Rice

Reviewed: Sep. 29, 2008
This is one of the best recipes I have EVER found. I was looking for ways to add more whole grains to our diet, and this was the perfect basic recipe for brown rice. I have made a number of adaptations; I often use vegetable or chicken stock or just water with chicken bullion. I have added shredded carrots, fresh mushrooms, fresh basil, chopped tomatoes, (any or all) but my favorite addition is fresh garlic! Yum! It smells so wonderful when it is cooking! Just be sure to use twice as much liquid as rice. I generally put my casserole dish in the microwave for 5-8 minutes before putting it in the oven to be sure that it finishes cooking. Great with grilled fish (or any other grilled main dish) Thanks for a wonderful recipe!

Turkey Mercedes

Reviewed: Sep. 29, 2008
I thought this was WONDERFUL! I found the recipe last year and emailed it to my sister (who had the Turkey responsibility last year). It smelled incredible while cooking and the juices were delicious on rice. This was different from the usual turkey and quite a wonderful change, in fact *I* might cook it THIS year!

Lemon Pepper Zucchini

Reviewed: Jul. 16, 2007
This was good, easy to fix. Like other reviewers, I used alot less butter and lemon pepper. I just brushed on a thin coating of butter, and sprinkled lemon pepper seasoning. You can make as much or as little as you want.
