Enjoying California's beauty with my WICKEDLY AWESOME husband who is a professional chef (and yes, a critic as well :-))who never fails to show me everyday what happiness truly is. My favorite things to cook
EVERYTHING!! I'm easily inspired-be it a place I've seen on tv-or a food/ingredient I've reciently learned about, I try to learn different ethnic dishes, techniques from my husband, and I LOVE cooking for a crowd!
My favorite family cooking traditions
Being from an Island family, the one thing you do, is cook and EAT! Everything is celebrated with food-traditional Guamanian or Mexican food is our mainstay, everyone gets together and pitches in, I love baking treats for holidays and parties, too. Given all that, nothing beats one of my husband's GREAT BBQ's!!!
My cooking triumphs
Just about anything I try. But you know that satisfying feeling you get when something you've tried really turns out well and you just LOVE it? It's a triumph!!! But my best triumphs are from recipes I've created on my own, no matter how long it took me!
My cooking tragedies
Once I was at someone's house and in charge of making garlic bread. Easy enough, and always a hit, I thought, "Cool, I got this" but low and behold, desaster struck!!!! I used a container containing Garlic Salt, instead of Garlic Granules.(no label) It had a lot of garlic in it so it didnt really look different. Can you imagine not only my surprise but everyone else's at the table???!!! ...If there was ever a time to disappear, that was it...my boyfriend was at the table, poor guy...he tried to eat them anyway and be supportive, but I could tell, he was dying. Needless to say, I never made that mistake again, and luckily, he married me anyway! :-)

Broccoli Chicken Fettuccini Alfredo
Made this yesterday and it was wonderful! The only thing I did differently was that I added a bit of pepper and garlic and marinated the chicken in pepper and garlic powder for a few minutes. This was really tasty and other than that, didn't change a thing. Not sure why negative reviews are so harsh, they must have done something wrong or skipped a step that was key because you can tell that even if I didn't add garlic, this STILL would have been really tasty! I never liked this dish till I came across this recipe. We loved it, and for us it's a keeper.

Banana Cream Pie I
Made this pie twice this month. Once just to try, then another for my mom. i've never made a banana cream pie before so this was a first for me. I usually try a recipe as is first, but after the first pie, although it had great flavor, I made a few small changes. First, I made my own graham cracker crust (another first for me outside of cheesecake) baked and cooled it. Then i used a little cornstarch instead of flour(this was purely a personal prefference, cornstarch just works better for me)and i did not bake this pie either. The eggs cook enough in the saucepan and the pudding is awesome! Then I chilled it for a few hours and right before serving, add a few dollops of whip cream, maybe even a few slivered almonds. This one is definately a keeper, thanks for the recipe.

Raspberry and Almond Shortbread Thumbprints
First let me say that I've never cared for these types of similar looking cookies like the ones you see in the store.(always hard, never enough jam) but thought the hubby might like them so I made these for him last night and WOW!!! LIFE CHANGING!! Not only were they a huge hit with him, but this is by far, the best I've tasted....seriously, the flavors are awesome! Followed the recipe exactly except I chilled the dough 30 mins before rolling, and used apricot and seedless blackberry jams. I also made 2 cookies with plum jelly just as a test, and that was really good too! It made 36 beautiful, perfect looking cookies!! I had a lot of fun making these as he distracted me many times in excitement, :) ... My favorite thing about it is that i got to add the amount of preserves i want. ...My only regret? Is that i didnt take another reviewer's advice and make a second batch. To all those who said they only make these at holiday times once a year: I honestly don't know how you do it, but hats off, ladies-I'm not that strong. LOL I will be making another batch tomorrow cuz they're going fast...so irresistible...
