I recently made a casserole that was beautiful enough to be in a Betty Crocker cookbook. Seriously. If casseroles could be compared to Supermodels, this one was Giselle or that new, cute chick in Victoria's Secret.
My cooking tragedies
One time I tried to make a key lime pie. I had it ready to put in the oven, and I dropped it. All over a shag rug. A long-pile shag rug. Sad.

Carol's Arroz Con Pollo
No, it's not traditional arroz con pollo, but it's still pretty delicious. I followed the advice of other reviewers and left the chicken in the pot the entire time, which I think was a wise decision (and less hassle that taking it out and putting it back in later). Super easy and super satisfying, plus I'm certain you could add more veggies and it would be just as good.

Spring Lime Tea Cookies
These had so much potential, but just didn't turn out the way I had hoped. I expected the cake consistency, by the lime flavor is subtle...as in not really there. I also had an issue with the glaze making the cookies almost soggy. If I make these again, I will add more lime juice/zest, and will use powdered sugar for the glaze.

Slow Cooker Split Pea Sausage Soup
Wow! What a great hearty winter soup. I also used chicken broth instead of the bouillon cubes, and accidentally left out the celery. This is so good. Highly recommended.
