Curried Pork Chops and Cauliflower with Basmati Rice

This was easy and delicious to make! I have cooked pork chops before but often I overcook them...using this recipe mine were delicious! I loved incorporating curry in a pork dish, and this was a great way to add cauliflower to a dinner entree. Thanks for the recipe!

I forgot to glaze with the juices halfway through cooking, but these still came out great! I cooked for about an hour and 10 minutes. Will make again!

Penne with Pancetta, Tuna, and White Wine

This was good, and a hit with my husband! I added more crushed red pepper, about a cup of wine, went more generous on the olive oil, substituted 2 chopped tomatoes for the cherry tomatoes, canned peas for the frozen peas, 8 oz frozen broccoli for the spinach, and regular bacon for the pancetta. It was surprisingly tasty! Will make again. Thanks for the recipe!

Orange-Glazed Cornish Hens

I scaled this recipe back for 2 servings (i.e. 2 cornish hens) but the cooking time was the same. I didn't have almonds so I used walnuts instead, and I didn't have celery. Even still, this came out great! The chicken was moist and the rice was very flavorful; I used fresh-squeezed oj from the orange I used for the zest. It got the thumbs-up from the husband - I will make this again. Thanks for the recipe!!

Indian Tomato Chicken

I loved being able to use all these spices and making something very different with chicken. I made this in a slow cooker and it came out very good. Not too strong but had a nice taste. Will make again. Thanks for the recipe!

Mini Cheesecakes

Easy to make and a big hit for the holidays. I used cherry pie filling and blueberry pie filling and made half of the cheesecakes each flavor which made for a nice and colorful presentation.

Chicken Breasts with Balsamic Vinegar and Garlic

Often I have had bad luck with cooking chicken in a saute pan on the stovetop - often it dries out. This recipe made for juicy and flavorful chicken, and great leftovers for the next day - if there is any left! Thanks for the recipe.

Chewy Coconut Bars

So good! I followed the advice of other reviewers and increased the salt to 1 tsp, and the vanilla to 2 tsp. I added about a third of a bag of coconut. One thing is to make sure you let these cool completely. I made mine at night and let them cool overnight. Trying to cut into them or eat them any sooner and you will have a gooey (but yummy) mess. I just had one this morning...oh so yummy! This was a great way to get rid of that opened bag of coconut and chocolate chips in the cupboard. One of my favorite flavor combos is coconut and chocolate - thanks for the recipe.

Asian Orange Chicken

I had some chicken and asked my husband how he wanted it cooked. He asked, "How about orange chicken like in the chinese restaurants?" I found this recipe and gave it a try. It came out really good - I was lucky that I had the ingredients on hand; the only thing I will do next time is NOT finish cooking the chicken in the sauce, the sauce gets so thick and if you try stirring the chicken in the sauce all the crispy coating on the chicken sloughs off! I had read this in a previous review but unfortunately I didn't follow the advice. I wish I had listened! But, even still it was so delicious I didn't really care!

Easy Mexican Hot Chocolate

I came across this recipe looking for something else, and I decided to give it a try. I followed the recipe except I substituted 1 Tbsp coffee syrup instead of chocolate syrup and I added 1/8 cp milk and 1/8 cup cream instead of 1/4 cp milk. This was delicious!

Cajun Chicken Pasta

This was very good. I increased the serving size to 3 because I had 3 chicken breast halves. A few things I did differently: I cut the chicken breasts in half so I had 6 pieces. I sliced up a yellow pepper in addition to the red and green peppers. I used a small can of mushrooms instead of fresh mushrooms. I didn't have any lemon pepper seasoning so I added a little extra ground black pepper and a splash of lemon juice. I didn't have heavy cream but I did have some leftover sour cream and regular cream which I used. I also didn't have any green onions so I just left them out. Finally, I added some more butter and some cornstarch to thicken the sauce at the end. Will make this again!

Slow Cooker Stuffing

I found this stuffing to be OK. My husband loved it though. I would probably make this again; cooking the stuffing in a crock pot was easy as this did not take up precious real estate in the oven on Thanksgiving day! I also used a slow cooker liner (can buy at the grocery store) to make clean up a little easier.
