Egg and Spinach Casserole
I will definitely make this again. It's a great template as you can add whatever you have on hand. As per other reviewers, next time I will omit the butter to save on calories (even though it turned out fine with it). I did a half batch and cooked it in a muffin pan making 6 single serving size 'muffins'. I used sautéed green pepper, green onion, and onion for 4 of the 'muffins' and then added spinach to the remaining 2.

Soft Oatmeal Cookies
Easy to make and great taste and softness. I found them a bit bland as I'm used to a recipe that uses cloves but that's an easy thing to add if it suits your taste. This is a great base recipe especially if you're dividing it into halves or thirds to put chocolate chips in one, raisins and cloves in another batch, etc. I also like how this recipe doesn't use lard/shortening as I don't usually keep that on hand.

Cut-Out Cookies in a Flower Pot
It was my first time making cut-out cookies and it was much easier than I expected even with using an old salsa jar as my "rolling pin". Most importantly, they passed the 3.5 year old icing (and eating) test. It's the first time my daughter got to eat one of her crafts and she's thrilled. I generally like sweeter cookies so if I ever make them with the intent NOT to ice them, then I'll add more sugar. Next time I'll try using less flour to see if it's easier to roll out.
