BAKER'S® ONE BOWL Coconut Macaroons

SO easy, and SO delicious! I added this to my christmas cookie list, and it was an incredible addition. I could NOT stop eating these delicious cookies, and will absolutely be making them again!

Spinach Cheese Pasta

After a few modifications, this was definitely a 5 star recipe. As previous reviewers suggested, I used ricotta cheese instead of cottage cheese. I used minced garlic, and as suggested, increased the amount to approximately 5 or 6 cloves (in my family, you can never have too much garlic!) In addition, I used an italian shredded cheese blend instead of just parmesan.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This was a great combination, and a wonderful way to use swiss chard. I used a whole can of chick peas and added minced garlic and a chopped yellow bell pepper - it was an incredible vegetarian dinner!

Risotto with Tomato, Corn and Basil

Absolutely incredible - I didn't have fresh tomatoes, so used organic canned diced tomatoes and since I didn't have fresh basil I used italian seasoning. I have also made a number of modified risotto dishes, using this technique as a base and it has always been a hit

Chicken Breasts with Balsamic Vinegar and Garlic

This was pretty good - my Fiance absolutely loved it - but I agree with some other reviewers that the flour coating is absolutely unnecessary. Initially, it fried up nicely, but as soon as I put in the liquid, all of the coating came off. This is the only reason I'm giving it a 4, next time I will just cook the chicken without the flour, and I am sure it will be delicious!

Creamy Au Gratin Potatoes

This recipe turned out absolutely wonderful. The sauce was thick and creamy, and did not separate or get runny as some other have said. Toward the end, I sprinkled the top with extra shredded cheese and took it out of the oven once the cheese browned (you can never have too much cheese!) I kept kept the recipe almost exactly the same, except that I let the sauce simmer for quite awhile and also added just a small amount of extra flour (heaping tbsp). I will definitely be making this for the rest of my life!

Tofu Parmigiana

This recipe went over fantastically with my fiance, who, being an avid archery hunter, was very skeptical about any non-meat centered meal - especially one involving tofu. In addition to drying out extra firm tofu before pan frying it, I also used an eggwash before coating the slices with breadcrumbs. I've made it several times now, and it always goes over great!

Sesame Shrimp

Simple and delicious! I doubled the shrimp and added a package of frozen stir-fry veggies and then served over rice. My fiance absolutely loved it!

Homesteader Cornbread

This is the best cornbread I've ever had. I highly recommend it to anyone who hates the dry, crumbly nature of most cornbread. I have made it several times now (including one meal which required me to substitute soy milk because of a guest's dairy allergy) and every single time it has turned out so moist and delicious that you don't even need dessert!
