Pan-Seared Tilapia

Quick, easy and delicious. Based on some previous reviews, I added some blackened old bay in addition to the salt and pepper. Looking forward to making this again.

Grilled Chicken Over Spinach

I used my George Forman to grill the chicken, next time I'll try pan frying with the seasoning, I think it will have more flavor. The sauteed spinach was very good. I would make this again, but use more spice on the chicken.

Rigatoni With Eggplant, Peppers, and Tomatoes

I made this for two,I used one eggplant, kept the garlic, red pepper and basil the same, as they are ingredients we tend to add extra when cooking anyway. I didn't have fresh tomatoes, so I used one can of diced tomatoes. I also sprinkled some parmesan cheese over the eggplant mixture in the pan.Served over ziti,as it was what I had on hand and I lightly sprinkled some grated parmesan cheese over the tomato sauce mixture. It's a good summer recipe for eggplant and not heavy like eggplant dishes with a lot of cheese.

Penne with Shrimp

Very good, will definitely be serving this again..I combined some other suggestions when preparing. I sauteed the shrimp in butter prior to adding to the sauce. I added a pinch of crushed red pepper and fresh basil.However, I did have to add some dried basil later,as it still needed a little more(dried did the trick, but we do love basil in our house, so you'd have to adjust it to your own preference). I also used petite diced tomatoes.

Peppercorn-Seasoned Steaks with Mustard-Wine Sauce

First time I've been able to use the frying concept to prepare steak with such great results. I didn't have shallots,only had vidalia onions and I also added a minced garlic clove, turned out very tasty. This recipe is a keeper and so much easier to clean up after versus using the broiler or grill.

Parmesan Chicken

Easy, fast and simple. However, watch the temperature when browning,they brown quickly. I was afraid I had burned them a little, but was very surprised they were great.

You'd never guess by the finished product how easy this recipe is. Instead of lemon juice I placed two lemon slices on each breast and added capers.

Pesto Turkey Burgers

Finally, a tasty turkey burger. I grilled these indoors on a George Foreman Grill. They were ready in five minutes. Served them on deli rounds,able to enjoy the burger without too much bread.

Chocolate Applesauce Cake III

I added the extra cocoa powder(as suggested) and vanilla,next time I'll cut back to the amount of cocoa listed in the recipe and cook it in less time. It turned out a little dry so watch the baking time on this one.

Seared Ahi Tuna Steaks

Thanks to previous comments I was prepared when cooking the peppercorns.I did reduce the kosher salt to 1/2 tsp. We like our tuna more medium well,so left them in the pan a little longer(3 mins each side). Great recipe.

Chicken and Sausage with Bowties

This was simple to make and very good. I was cooking for two, so I used two chicken breasts and only had chorizo sausage on hand (only had one link),I just cut it into small pieces. I also used three garlic based and petite diced tomatoes. I look forward to making it again when I have all the ingredients on hand.

Easier Chicken Marsala

Made this for two, using two breast halves flattened. Didn't reduce the other ingredients. Per other reviews I used Italian seasoning instead of oregano, browned the mushrooms after removing the chicken from the pan, I also added two crushed garlic cloves and browned those with the mushrooms, then added the chicken back to the pan and added the wine. I didn't have Marsala wine, so I used a nice Pinot Noir I had on hand. Turned out great. Served it with thin spaghetti tossed with 1 tbsp.butter and a small amount of Parmesan cheese.Can't wait to make it with the Marsala wine.

Sweet Sausage Marsala

Easy and very tasty. The only thing I do different is to slice my sausage first, then brown. (If the sausage is frozen, it's easier to slice partially frozen)

Vanilla - Chocolate Powdered Sugar Frosting

Needed a vanilla frosting for a spice cake. This was just what I needed. Based on other suggestions used real butter(no margarine), so real butter it is from now on for this recipe.

Chicken Scarpariello

This easy & quick to make. Didn't have shallots, so, as suggested, I used half of a small onion, in addition only had 1/4 cup of white wine, so I made up the difference with chicken broth. This will definitely be a regular on our menu.

Quick Chili I

This recipe is easy to work with. We didn't need eight servings. I made some adjustments.(one pound ground beef,two cans diced tomato,(one chili ready,one regular).Reduced the spices based on the recipe portions.Used one onion and three garlic cloves.For the water,kept it at one cup,but used 1/2 water and 1/2 beer. Added green peppers and corn. Can't wait to make the full recipe next time.

Baked Salmon Fillets Dijon

Was visiting out of town with limited ingredients in the cupboard. Didn't have Italian bread crumbs,so made from toasted bread added oregano, garlic & onion seasonings.So easy and tasty. Can't wait to make it again.
