OK - I used a large cast iron skillet - probably more corn tortillas than called for and used ricotta cheese instead of cottage cheese. This is an awesome recipe. The whole concept of corn tortillas on the bottom instead of pie crust! Made it for Easter brunch - we loved it!!!!!!!!

Best Carrot Cake Ever

I liked Sam's carrot cake better (on this site). This one was more "walnutty" and had 2 more cups of carrots than Sam's - but I LOVED THE OTHER ONE'S FLAVOR! Also, I made 3 7" layers with this cake - it was beautiful!

Creamy Vegan Corn Chowder

It's a beautiful soup. I creamed a lot of the veggies in there after cooking (we think it improves the flavor). I added a fresh jalapeno and a potato. Doubled the garlic (don't you just hate people like me???? rating a recipe they changed....I get it....but....) I would make this again in a healthy heartbeat (don't you hate people like me who think they're funny? lol)

Slow Cooker Chicken Taco Soup

Agonized over the beer after reading all of the reviews (I really must get a life....lol). Do the beer - adds so much flavor! Killer soup - took it on a ski trip and it was loved - and one lady hated beer!

White Almond Wedding Cake

ok _ I almost didn't make this - those that loved it...LOVED IT! And those that didn't cursed it and insulted it...well you get my drift. Made this for bookclub - THE DAMES LOVED IT MORE THAN MY SOUPS! Definitely will make again! Beat the egg whites separately and fold in - it's divine that way! Made with buttercream icing from this web site. Whipped raspberry preserves with the icing for between layers.

Split Pea Soup Atu

Do everything the reviewers say to do - add the extra veggies, etc. I used lots of ham and did the immersion blender. So creamy and good. I did half the water - very important, I think!

Spinach Tortellini Soup

I hate it when people do this - but here I am . It's 5 stars BUT I added a can of fire roasted tomatoes, slivered carrots and sweet Italian sausage. Plus I sauteed onions in garlic and olive oil. I destroyed the original recipe - but ohmygoodness - THE BEST SOUP EVER! Cook the pasta separately!

Vietnamese Iced Coffee

I think this is a great flavor. I make 2 espresso servings and pour those over the milk and ice cubes . Not sure if the measurements are off. Love it just this way though. I can't stand unsweetened iced coffee and this is perfect. Starbucks take note!

Broiled Tilapia Parmesan

Best meal I've made in a while. Quick and delicious and pretty healthy. Made it with the greek salad recipe and sweet potato fries. We inhaled it. Wasn't pretty to watch but it's the truth!

Amazing Italian Lemon Butter Chicken

I cut the butter sauce in half - just seemed like way too much butter for this old body. With all of these flavors together, I really think it should have been 5 stars - but mine didn't make it. May have to re-rate when I make again - ...maybe I left something out? More salt? Who knows - will def make again!
