Tomato Spinach and Basil Soup

Very good. I should have sauteed the onions longer...they were still a little crunchy. I used frozen spinach because I had it on hand, and added fresh oregano and thyme from my garden. Even with being 9 weeks pregnant, it tasted good!

Easy Granola Bars

We didn't like these at all. They are hard to chew, and the taste of condensed milk is overpowering. I made them several months ago, and they are still sitting in the freezer.

Potato Pizza

Not what I would really call pizza. The crust wasn't crispy, and overall, I'd say it was a bit bland. It was also a lot of work. I'll probably still try it again, with some modifications.

Eggless Tofu Spinach Quiche

Great recipe. Last night at 6:30 pm I discovered that the leftovers I planned to use for dinner were gone, and suddenly needed to scramble to get something ready by 7:30. This came together in a hurry. I only gave it 4 stars because it hardly seemed like enough filling for the crust. However, increasing the amount of filling would also increase the baking time, so maybe it was just as well this way. I'll definitely make this again. I didn't have Swiss, so just added some extra Cheddar.

Impossible Pumpkin Pie II

Loved it. I only gave it four stars because it didn't form its own crust as stated. Also I prefer it with a bit more spice. I didn't have pumpkin pie spice, so I used a mix of cinnamon, ginger, allspice, cloves and nutmeg which I mixed myself. Next time I'd just add more. I did a double batch and baked it in a 9x13 pan, and then topped it with cool whip.

Tofu Creamed Spinach

A quick, nutritious, and delicious recipe! I used this as a companion recipe for Eggless Tofu Spinach Quiche (look it up on allrecipes). I had a 19 oz package of tofu, so I used 8 oz for the quiche one night and then the next day use the rest of the tofu for the creamed spinach. I added a couple mushrooms, and used 20 oz of frozen spinach, but otherwise pretty much followed the recipe. We ate it on top of baked potatoes done in the microwave for a quick meal.

Bok Choy Salad

Absolutely fabulous. I made some for dinner last night, and then at 2:30 am woke up craving more...so I got up and made it! For a different twist, try balsamic vinegar instead of lemon, and walnuts instead of almonds.

Drop Sugar Cookies II

This is a cake style cookie. I'm giving it 4 stars because personally, I don't care as much for the cake style cookies, but in their class, they are pretty good. They are cheap, easy, and use sour milk, all good reasons I'll probably make them again. I keep a list of recipes that use sour milk for the inevitable occurrence of milk going sour on me. Never throw it out!

Cornmeal Cheese Muffins

My husband said, "I think these are some of the best muffins you've ever made!" I make a lot of muffins, so that is really saying something. I had a carton of cottage cheese that went sour, (OK, the expiration date was a couple months ago!), so I decided to give these a try to use it up. It worked beautifully. I think I'll make a couple more batches tomorrow to use up the rest of my sour cottage cheese, then stick them in the freezer. I did use 1 cup each flour and cornmeal as suggested by another reviewer.

Apple-Raspberry Crisp

I just used 1 cup brown sugar, but split it between the apples and the topping. The flavor is wonderful. I didn't have Granny's, so I used what I had on hand, which happened to be a sauce apple. I am a lazy cook (Ok, not really, just a busy cook with a 9 month old to entertain) so I didn't even bother peeling the apples. Everyone at our house is just happy to have dessert, so no one is complaining. :-)

Pasta with Greens N Beans

I am not an escarole lover, but since we got some with our CSA share, I needed to find a way to use it. I had a bunch of escarole, and one of dandelion greens, both very bitter. This recipe actually made them palatable. I'll turn to it again when I have greens that I don't know how else to use. I didn't have the beans on hand, so I just skipped them. I used hot sausage.

Golden Pancakes

I was looking for a recipe to use up some cottage cheese that went sour on me (Ok, so it was a couple months since the expiration date!). This recipe worked perfectly. You couldn't tell that the cottage cheese was sour. It is more of a crepe than a pancake, so I'd recommend serving with either toast or muffins. Good with fruit spread or maple syrup. My husband ate them with hot dogs (OK, he's a little strange, just a tradition they had at home!). My 9 1/2 month old loved them too.

Fantastic! The only thing I changed was that I, being a tightwad, made a double batch, but only used about 1 1/4 bags of chips instead of 2. Still plenty of chips. Definitely will make it again.

Light Wheat Rolls

This is a delicious recipe. I followed it exactly, except for reducing the amount of butter spread on top, Oh, I cheated and didn't roll them out, but just pinched off balls and made plain old rolls. I noticed that there were some comments giving this fewer stars because "the rolls don't have any flavor" or something similar. Please! This is not a recipe for garlic rolls, or savory herb rolls, or hot and spicy rolls (although as others have mentioned, it can be adapted to be such). This is a recipe for light wheat rolls, and that is exactly what you get. Those of us who appreciate good bread in and of itself without any need for added flavor, this is a keeper recipe. I did a triple batch and used my Bosch mixer to mix them, and it worked the dough just fine. This recipe is also definitely toddler approved. My 15 month old has had two already, and they are barely out of the oven!

Sassy Spaghetti

I made this recipe as written, except that I used a 13 oz box of whole grain spaghetti instead of the 16 oz in the recipe. I also had cooked my own beans, and had just over a pound of them. Even with having less spaghetti and more beans than the recipe called for, there was WAY too much pasta for the amount of bean mix. It was very dry. I ended up adding a bit of sour cream to make it more palatable. I won't try this one again without major adaptation.
