April's Infamous Spinach and Artichoke Dip

I am now forced to bring this dish to every major function!! People absolutely love it. I am SO not domesticated, but this dish is so easy and delish, it gave me confidence to at least TRY to cook! This recipe is even low carb dieter approved:) I gave it four stars because I feel this recipe needs tweaking. I add ALOT more cheese (I mix asagio, parm, cheddar.. what ever cheese is in the fridge) lots of rosemary and garlic, and I use light mayo (shh.. don't tell!!) I feel it is best made in a crockpot so it stays hot. When cold, it is thick and has a weird texture. Rave reviews always!!

Made with 1 bag semi-sweet chocolate chunks and 1 bag white choc chips, otherwise, made as written. Amazing recipe. referred to as "magical" by my husband's co-worker, which made me laugh. This is the best cookie recipe EVER and made me look like I know what I am doing:) Thanking you!!

Best Big, Fat, Chewy Chocolate Chip Cookie

yum. no changes this time!! make as written and enjoy. :) (just make sure your garlic is soft.. it may take more than 30 min.. if not roasted enough you will be dissapointed!)

Orange Rosemary Chicken

added orange zest and rubbed an olive oil and garlic blend under the skin (I was bad and fed the hubby skin on chicken..gasp! LOL) otherwise perfect as written. Thanks for the great recipe

Banana Stuffed French Toast

wow. this was delish. left out the orange liquor and orange zest. Added a dash of chai spice, splash of almond extract and to the finished product cinnamon honey butter (3tbsp butter, 2 tbsp confectioner's sugar and 1 tbsp honey with a dash of cinnamon) will definitely be making this again.

Currant Jelly Wiener Sauce

(I am a STRICT vegetarian so I am just going by my co-workers reactions) I made these as directed and had mixed reactions. The general consensus was "they are ok" some people thought they were "pretty good". My feelings were kind of hurt because I usually get rave reviews for everything I make, which in all fairness is usually dessert. I will try to make this again for a different crowd and get back with you guys on the reviews:)

Spinach and Tortellini Salad

pretty good. I followed the directions pretty closely. I used Ken's steakhouse light italian dressing.. just a splash. As per other reviewers, I used fresh spinach. I used grape tomatoes, which got unappetizingly squishy after a few hours.. Next time they will be a last minute addition. I used a 16oz bag of 3 cheese tortellini cooked for 7 minutes. A handful of reduced fat feta topped it off nicely. will make again!

Oreo™ Cookie Bark

OMG so good and sooo easy. no one belived that there were only 2 ingredients!! I melted a whole bag of Ghiridelli white chocolate chips in the microwave and broke the Banana Split Oreos(limited edition)into quarters..so easy to just dump the melted chocolate onto the oreos and refrigerate. I blew my diet for the day and ended up eating this for breakfast and lunch. Yummy!! A new, awesome addition to my cookie reportroire!!

Red Velvet Cake I

loved by all that came within smelling distance but I had to take the advice of more experienced Allrecipes cooks and make these modifications (hence the 4 star rating) -4 tablespoons unsweetened cocoa powder instead of only 2 -1 cup of oil instead of the shortening -OMITTED THE VINEGAR ALL TOGETHER -used and entire tube of red food gel. Made for a beautiful deep garnet color! -I made cupcakes so I only baked for 22 min @ 350. Absolute perfection with these modifications, and passed the firefighter taste test, so you know they have to be awesome:)

Banana Pancakes I

yummy. made as directed for the first time in my life.. firefighter hubby gets home way early and I was too lazy to improvise;)Anyways, hubby loved them. I took a little bite to test and OMG, but not on the diet so I didn't indulge! :) p.s. 30 yr old metabolism stinks. I so would have eaten this even 2 yrs ago without even sweating it :(

We Be Jammin' Jamaican Banana Bread

Loving this recipe!!! A big hit with the co-workers and the DH.. Made as written but added macadamia nuts with the pecans and gave everyone pineapple juice to drink to make it that much more Jamaicanish, YA mon:) oh the Jamaican honeymoon memories **blushes** LOL

Chocolate Turtle Cheesecake I

delish!! sent it to the fire station with my husband to see if it was up to the firemen's high standards (they are quite the critics, and not afraid to tell you if something is mediocre!) it got rave reviews and they told me I can make it for them anytime. Made as directed but i swirled the caramel and chocolate on top of the cookie crust and topped it with chocolate turtle candies. YUMM

made as directed..topped with strawberry topping and whipped cream; better than any restaurant! Awesome that when I make this at home I can go organic and control the fat content, unlike at restaurants where you are at the mercy of the chef :)
