Grilled Asparagus

This has got to be the best way to cook asparagus. This simple method brings the thunder and can't be beat. Please make grilled asparagus, just a delicious dish. You get all the green, fresh flavor of the asparagus, a little smoky char from the grill, and perfect crunch through the middle. Use this recipe!

Twice Baked Potatoes

We were going to make baked potatoes tonight with our steak but I wanted to spice up the potatoes a little bit so I found this recipe. I thoroughly enjoyed these potatoes. Followed the recipe exactly. Just a great accompaniment to any meat dish, superb alternative to plain baked potatoes. There was a bit of prep-work involved, but in the end it was worth it.

Cheesy Baked Salmon

I used about three times the garlic suggested and manchego cheese from Spain instead of cheddar and it turned out wonderful. I also baked it with asparagus beneath the salmon. MMMMMM!

Thai Pineapple Chicken Curry

this recipe was delicious. However, it was not the least bit spicy. I used between 3 and 4 tbsp. of the thai kitchen red curry paste, which was completely insufficient. next time I may have to use the entire bottle.

Greek Chicken Pasta

I made this three or four times with half the pasta and it was good. then I started doing it with canned tomatoes in olive oil and garlic and it really added something to the recipe. I definitely recommend using canned tomatoes over "fresh" tomatoes from the grocery store. Who knows how fresh those things are anyways...

Mexican Rice III

This recipe is absolutely delicious. Better than any restaurant's rice I've ever had. I used a fresh tomato, onion, and cilantro which I believe to be the key to how well it turned out. Especially the fresh cilantro.
