Mexican Whole Wheat Flour Tortillas

I used olive oil instead of the shortening and added 1/2 tsp baking soda. Perfect! They roll out so easily.

Chef John's Macaroni and Cheese

Hooray for no processed cheese! I used mild and medium cheddar, but I did wish I had sharp on hand. I left out the nutmeg, since I don't like it in anything, except a dash in pumpkin pie. I used vegetarian Worcestershire sauce, cut down the cayenne a tad, used a little black pepper and Italian bread crumbs instead of panko (omitted the butter in that, just sprayed the top with oil). Next time I will use a little less salt and make more sauce. It does soak in when you bake it. I also think it would benefit from some sauteed onion. Love the additions of white pepper and thyme. I used a heaping 1/4 tsp of thyme and it was perfect! Yum!

Zucchini Herb Casserole

Wow! I didn't know a casserole could be this good and healthy! I was very impressed that the amount of rice was less than the veggies. I used fresh herbs (just doubled the amount) and only 1 cup of cheese. I believe it was cheesy enough with just one.

Homemade Refrigerator Pickles

Delicious! I don't think you would need all the cups of sugar though. I used 2/3 cup of sugar and about 1/2 tsp of pure stevia white powder (equals 1/2 cup sugar) to make the calories much less. It's plenty sweet!

Rich Chocolate Frosting

I am really critical of frostings, but this is awesome! Paring the recipe down to 8 servings is the perfect amount for an 8x8 cake size. I used dutch cocoa in it, so it's even richer and chocolatier. YUM!

Quick and Easy Brownies

As an avid home baker/cook I rarely have failures, but this is one of them. I did not care for these brownies! I prepared them exactly as it's listed, in a glass 9x13 pan. They took longer to cook, about 45 min, and came out cakey (which is fine) but not chocolatey at all. I use a good quality dutch cocoa even and it just didn't cut it. It's like a pale tasting cake. Now I have a whole pan of these things that I won't eat.

Jay's Signature Pizza Crust

Pretty much the best pizza dough recipe I've found! I use bread flour and it comes out a lot easier, than using all purpose. You need a lot more AP to make it workable. Thanks, Jay!

Rum and Chocolate Cheesecake

I used extra firm tofu which made for a really thick pie, but I'll use firm next time for more creaminess. I used coconut oil, soy milk, and broke up the sugar between sugar, agave, and stevia. I used rum extract instead of rum. I used 1/2 cup of ww flour for the crust instead of a full cup. That was much more pleasant. I will add some salt to the filling next time as it tasted flat. All in all, with a little tweaking, this is a great recipe!

Healthy Banana Cookies

I too replaced the oil with applesauce. Used mostly dates and a few mini chocolate chips. Next time I'll add a tad of salt, as they taste pretty flat, but pretty darn good for the calorie content!

Whole Wheat, Oatmeal, and Banana Pancakes

Awesome and very versatile! My whole wheat flour tends to be very dry, so I either add more liquid or cut it down a bit. Added a little pumpkin pie spice and my toddler ate it in a flash!

AWESOME! I replaced 1 of the cups of flour with whole wheat flour, used all honey (hubby not a fan of molasses), and 1/3 cup olive oil in place of the margarine. So light and fluffy!

Oatmeal and Wheat Flour Blueberry Pancakes

Not bad! Used all whole wheat, didn't have milk. Put some chocolate chips in it, along with mixed berries. Very filling! I would probably cut down the oats next time and add more flour. The texture was too much like oatmeal.

Easy Chicken Enchiladas

This is super easy! I needed a meal I could make in 15 minutes flat. I am a vegetarian, so I used a can each of pink and red beans, halved the cream cheese, and added two cut up Chikn patties. Rolled it up, put cheese on top, microwaved it for 4 minutes. Then I cut up tomatoes, olives, and green onions for garnishes. My husband loved it and was out the door in 10 minutes. Thanks!!

Tofu Creamed Spinach

This was good. I could still detect the chalkiness of tofu, but what are you going to expect? It's low fat! It was a wonderful use of silken tofu. I used some hot sauce and chili pepper flakes to give it some depth and tossed it with some pasta. Great!

Miniature Chocolate Eclairs

These are by no means mini eclairs! I made 14 and they were still kinda big. Even after lowering the temp and shortening the baking time, they burned on the bottom. I probably made the slits too deep because they were completely hollow and broke out the bottom when I removed them. I had to fill them upside down! I used vanilla pudding (would have used bavarian creme filling if I had it) and the taste was awesome. I will adjust them and try again!

Yummy Bok Choy Salad

I about halfed the dressing recipe, eyeballing it. I cut down the sugar too. It was enough dressing after everything was tossed, just enough flavor without everything being drenched. I also just chopped some raw almonds and crushed ramen noodles in it instead of the chow mein noodles. Yum!

Butternut Squash, Apple, Onion Au Gratin

YUM! I know what's going to be on our Thanksgiving table! I am vegetarian, so this is what I did. 1 butternut squash, peeled and cubed (I just used one of the small ones from last co-op pickup, about half the size of a conventional one) 1/2 red onion, diced 1 apple, diced 1/4 C flour 1 cup of water with one vegetable bouillon cube dissolved in it 3 strips of veggie bacon, cooked and crumbled 2 slices of sharp cheddar cheese, chopped salt itty bitty dash of cinnamon I baked at 350 in my Pampered Chef Mini Baker (stoneware) until the squash was tender, stirring once. Paired great with my curry dish too! So colorful using the red onion!
