I am 23. Married for 1 1/2 years to my friend of 10 years. We're expecting our first baby in April. And I've been a vegetarian/vegan my entire life!

I have had many cooking triumphs, thankfully, and am becoming known for my good "different" (ie: ethnic!) cooking...being in a small midwest town.
My cooking tragedies
I have only have had a few tragedies. Sadly, the last two times I made seitan with a certain kind of flour, it has been a total flop. But I'm forging onward!

Mexican Whole Wheat Flour Tortillas
I used olive oil instead of the shortening and added 1/2 tsp baking soda. Perfect! They roll out so easily.

Chef John's Macaroni and Cheese
Hooray for no processed cheese! I used mild and medium cheddar, but I did wish I had sharp on hand. I left out the nutmeg, since I don't like it in anything, except a dash in pumpkin pie. I used vegetarian Worcestershire sauce, cut down the cayenne a tad, used a little black pepper and Italian bread crumbs instead of panko (omitted the butter in that, just sprayed the top with oil). Next time I will use a little less salt and make more sauce. It does soak in when you bake it. I also think it would benefit from some sauteed onion. Love the additions of white pepper and thyme. I used a heaping 1/4 tsp of thyme and it was perfect! Yum!

Zucchini Herb Casserole
Wow! I didn't know a casserole could be this good and healthy! I was very impressed that the amount of rice was less than the veggies. I used fresh herbs (just doubled the amount) and only 1 cup of cheese. I believe it was cheesy enough with just one.
