Pumpkin Cheesecake Squares

Wow, these are really good. Never been a big fan of pumpkin pie so this is a good alternative. I now stock cookie dough and cinnamon chips so I can make all year long. Cinnamon chips are mostly available over the holidays so load up. The cinnamon chips are also really good in oatmeal raisin cookies.

Thai Fried Rice with Pineapple and Chicken

I just didn't like this at all. To much curry made it hot and the other flavors were lost. I would reduce the curry by 1/2 at least (you can always add more if you like) and I like curry. Anyway, just didn't do it for me and I ended up making pizza instead, such a waste of time and ingredients. It did look good and smelled good, it just didn't taste good to me sorry about that.

Turkey Wild Rice Soup

I have been making this recipe for years, it is an all time favorite with me and anyone I make it for. Absolutely delicious. Looks beautiful in a bowl with the white creamy broth the black rice, green onions and the bacon. My recipe does not have the sherry in it but will give that addition a try the next time I make it.

Pineapple Angel Food Cake I

I made this as directed (baked a little longer) but otherwise as directed. It turned out perfect in the pan. I topped it with fresh berries and light cool whip. My issue is that it is just not that great. Something is missing it just didn't taste like much of anything and not sweet enough to satisfying that sweet tooth. I know it is supposed to be a low calorie dessert and that is what I wanted but I think I would rather have one small piece of something really good and flavorful than a piece of something that just doesn't satisfy. I tossed the last two pieces, low cal or not, I didn't want it, hubby didn't want it and I would not make it again.

Souper Skillet Pasta

This is a quick, easy, weekday meal which turned out better than expected. The dry onion soup mix was a concern but I followed the recipe and it was easy and very tasty for the effort involved in making it. Sure you can add things to this if you choose to do so, but now you have created more work than you need to as this is good as written. I served it in the skillet with just the addition of some fresh basil over the top. I will make this again and I am sending the recipe to the kids so they can make it for their kids.

Creamy Blueberry Pie

I liked this pie, probably better than regular blueberry pie. I made it exactly as directed and it was good, but it could be better. The next time I made it, I didn't think there was enough blueberries in the pie so I doubled to 6 cups. I cooked 3 cups and mashed and thickened on the stove to reduce to 1 1/2 cups. Cool then add remaining berries and sugar. It was really, really sweet, so I reduced the sugar to 3/4 cup using the doubled blueberries. I added a peeled grated apple squeezed dry in a towel to the blueberries to help thicken (tip from Americas test kitchen, pectin in the apple will help to thicken) and I did not use flour in the filling because that has a thick gluey taste in this pie. I used 2 T. quick cooking tapioca ground. I added 1t. vanilla to the filling and some grated lemon zest. So, given that I made it as directed and then again with these changes, I hope you try it either way, but if nothing else, reduce the sugar it is really, really sweet as is so add less and taste, then add more if you want.

Zucchini Brownies

Made it exactly as directed and they are really, really good. Hubby who dislikes carrot cake or anything green for that matter had no idea zucchini was in here and he loved them. They are very moist, dark chocolate, fudge like brownies. I could not see any of the zucchini in the brownies after they were baked. I grated my zucchini first before doing anything else and by the time I added it, it made a thick but moist batter. I will make these again. Frosting is equally good.

Apple-Stuffed Acorn Squash

Made it exactly as directed with only the addition of salt and pepper. In a word delicious. I love it, hubby loved it and our house guesst said "this is really good". I too was a little afraid of the cheese in this but that in my opinion put it over the top. Next time, and there will be a next time, I would cube the squash and serve it all in a bowl because a whole 1/2 of squash stuffed was alot and hard to eat with the peel on and trust me you want to gobble it up.

Salisbury Steak Deluxe

Very good. I substituted Golden Mushroom soup as that is what I had. Husband loved it and so did I. I hate horseradish but put it in anyway I think it adds to the flavor of the sauce. Go for it.

Rhubarb Custard Pie II

I could have entered a contest with this pie and Won! Followed the recipe exactly except for adding a little cinnamon to the custard part. Topped it with a lattace crust and some raw sugar and it came out of the oven looking beautiful. Hubby had two pieces and now he likes Rhubarb.

Cranberry Brownie Torte

This looks beautiful and mine turned out exactly as pictured. However I did not like it nor did anyone else at my party. The brownie is thick and hard to cut. The cream cheese filling is good, but the addition of the cranberry juice makes it sour so add more sugar. The cranberries on top are sour and I love cranberries. As I said, it is beautiful, but I would change the brownie to a cake, omit the juice from the cream cheese and sweeten the cranberries before putting on top or use a cherry pie filling on top instead. No one liked it.

Quick Savory Cranberry Glazed Pork Loin Roast

I too would serve this to the president. Made as directed for the sauce. I did coat the meat with cornstarch, salt and pepper and brown before putting into the oven. This will help the glaze stick to the meat instead of falling off. Cook only to internal temp. of 140 and let it rest for 10 minutes before serving. Temp. will rise while resting. If you cook to 160 you will dry out the meat and it will be overcooked.

Grandma's Iron Skillet Apple Pie

Very, very good. Made exactly as directed and hubby said, "this is the best pie you have ever made" I agree. Do however spray your skillet with cooking spray or you will not get the pie out.

Sweet and Sour Pork III

In a word, Fantastic. I loved it. Thanks for sharring. Made it almost as directed, except added 2 hot peppers and some pea pods. Just added a subtle heat to the dish, so don't be afraid to try adding them. The sauce is perfect and I can't wait to make it again.

Indian Pudding

I really didn't think I would like this, but I had this cornmeal to use up and gave it a try. Go ahead try it, it is very good and perfect for the fall. Excellent with whipping cream or cinnamon flavored ice cream. I did add about 1/2 to 1 tsp. of ginger to the mix.

Shrimp and Feta Cheese Pasta

Very good, I loved it. Only thing I did different was to up the wine to 1/2 cup and use a can of fire roasted tomatoes. Makes a little more sauce this way. I also used a garlic, herb feta cheese and would use that again. Very tasty, its a keeper. Thanks for posting this one.

Quinoa and Black Beans

First time trying Quinoa and who knew there were so many varieties. I liked this dish, it's different, looks pretty and tastes good, just looks kinda weird. I did reduce the beans to 1 can and add a can of tomatoes with chilies. Nice and spicy as written. Makes a nice lunch.

Green Grape Salad

Very good. I too used both green and red grapes for eye appeal. Something different to serve up and everyone loved it. I made extra sugar/nuts and then sprinkled the extra over the top for more eye appeal.
