Super-Delicious Zuppa Toscana

LOVED THIS! Great on a cold night! I omitted the red pepper flakes, to tone down the heat for the kids, and I made small cubes instead of thin slices of the potatoes. It was wonderful, simple and pleased the whole bunch! THANKS!

Lentil Chili

With this recipe, I was able to combine two healthy items and make a chili that not only pleased everyone (4yr old and teen), but my husband ate seconds - and leftovers! My previous attempts to use lentils have not been met with much enthusiasm & recently my butcher husband has been bringing home ground chicken to help lean our diet some. I did use an entire bag of lentils & added a can of Rotel Chili Fixin's (already seasoned tomatoes,onions & peppers) in place of the tomato sauce. I also added the spices as directed since we like our chili deep and rich. We will be making this again for sure!

Banana Cranberry Muffins

LOVE these! Because I didn't want to go to the store,I used Dried Cranberries (craisins) & added them directly to the batter.(they had sugar in them). This caused me to reduce the sugar to just the 2/3C for the batter. I also did not use nuts. AND I added a cinnamon struessel topping. They are crispy on top, moist inside. Yummy & pretty with the red berries!

Mini Pumpkin Muffins with Orange Drizzle

The only changes I made to these were to sub. applesauce for oil, and I used a mixed pumpkin pie spice. They were fabulous! I love the spice and the orange zing. My only problem is that the muffin seems to be sticking to the wrapper quite a bit on bottom, but that may be due to the applesauce, not sure- besides, I am not above eating it off the wrapper, are you?! Regardless, these should do good a my friends Breast Cancer bake sale! Thanks!

Chocolate Chip Marshmallow Bars

I love the chewy texture of these! My kids scarfed them up! After reading others remarks, I used 1/2C shortening, 1/2C real butter in addition to using whole wheat flour (forgot I was out of white)and mini colored marshmallows (what I had on hand) These were quick and delicious!! I make cookies on a regular basis and have just discovered the time saving bar cookies. Thanks for the recipe!! :)

Ginger Glazed Mahi Mahi

I had not enjoyed Mahi in the past, but thought this recipe was a good reason to try again... it was so fantastic that I now make copies of the recipe and hang them on the door to our seafood counter at our butcher shop! We are selling more mahi-mahi than ever, and everyone loves this! THANKS!

Winter Vegetable Hash

I fell in love with this at "Hello"!!!! Not a big squash fan, but after killing my hands to cube a butternut and acorn squash- it was worth it! I had never eaten Kale, and I used the whole bunch, which worked fine. This was fantastic! Will be using this one forever! Thanks!

Three-Berry Lemon Trifle

My 14 yr old son made this for a "Men's Dessert Contest" at church. He didn't win (cheaters :P) but the bowl was empty faster than any other dessert! Easy, great tasting, light and refreshing. We used a frozen berry medley and enjoyed the juicier quality from the fruit once it chilled overnight. Thanks!

Honey Lemon Cookies

I made a few changes because it was 102*F here today and I didn't want to go to the store- but I have no doubt it would have been great as written! I doubled my recipe. I only had 1/3C honey, used Yoplait lemon non-fat, light yogurt and lemon extract as I had no lemons on hand and only enough lemon juice to make the icing. I also mixed the honey mixture with the yogurt/butter mixture for ease of combining with no problems- and I did have to add about 1/3C extra flour due to the yogurt containers being 6oz(more than required) Took this to a church function and was asked for the recipe more than 10 times! Moist, cake-like and the small size was appealing. I made over 60 cookies, and came home with none!

Mom's Carne Guisada

My hubby is a butcher so whatever cuts of meat he brings home, well, I have to make it work. I have never had Carne Guisada so this was an experiment for me. My whole family loved it! I sauted frozen pepper stir-fry mix on hand, added some left over diced tomatoes and when the meat was brown, I deglazed the good stuff stuck to the bottom with some of the water. I blended the flour with the water beforehand and added it with the meat after deglazing- put a lid on it to tenderize the meat some. Took the lid off to reduce it to a thick gravy- awesome! Everyone,including the veggie fearful teen, and chicken nugget eating toddler ate it all. Thank you for such an easy recipe! A keeper!

Soul Smothered Chicken

Looking for something to do with a cut up chicken besides fry it- my family enjoyed this chicken! I took off the skin and reduced the butter. My teenager didn't like being able to see the vegetables (he's anti-healthy right now) but he ate his fair share. The toddler liked the gravy it made, and hubby had to have his plate moved from in front of him before he exploded. Thanks so much!

Italian Chicken with Garlic and Lemon

I threw this together and left it to cook in a timed oven while gone to church- it turned out perfect! I know a recipe is worth it when hubby takes the left overs for lunch the next day. My son didnt care for the onions- but if that is the only complaint? My 2 year old pigged out on the potatoes and she normally won't eat them unless they are fries! Thanks for a light tasting, flavorful recipe!
