Clone of a Cinnabon

Reviewed: May 8, 2010
These are A-MA-ZING. I don't have a bread machine and these turn out wonderfully made by hand. I double the filling to make them extra gooey. To save time, I double the recipe and after the rolls have been sliced I lay them on a cookie sheet with parchment paper and freeze them. When they are frozen, they can be stored in the freezer in a ziplock bag. The night before I serve them, I put as many as I want in a baking dish and let them thaw and rise overnight. They are ready to be baked in the morning. These also bake well in individual size ramekins if there's just a couple of you at home.

The Best Rolled Sugar Cookies

Reviewed: Dec. 11, 2008
Must agree with everyone else! These sugar cookies are fantastic! I followed the suggestions of others and substituted the 2 cups white sugar for 1 cup white sugar + 1 cup powdered sugar, and increased the vanilla to 2 tsp. I also didn't have any lemon extract, so I used lemon juice. These cookies have the perfect amount of sweetness and the lemon adds a really nice flavor. I usually have trouble with rolled cookies, but found this dough to be incrediblly easy to work with. I refrigerated the dough for several hours and then only worked with half at a time, leaving the remainder in the fridge. I rolled out the dough on a floured silicone baking mat, and found it really easy to turn the cutout onto my hand and put on the cookie sheet without damaging the shape of the cookie. I had to increase baking time to 11-12 minutes. LOVE these cookies! They are sturdy enough that you don't have be really gentle with them, but also tender in the middle.

Gingerbread Biscotti

Reviewed: Dec. 3, 2008
This is delicious! I followed the suggestions of the others who mixed the dry ingredients together and then added the wet ingredients (including using butter instead of oil). I also substituted fresh grated ginger (about 1/2 T) for the dry ground ginger. This biscotti was very easy to make, and will be a regular treat during the holidays. Thanks!

Pumpkin Coconut Bread

Reviewed: Nov. 18, 2008
This bread is delish! Very moist and spicy. The coconut adds a surprising texture and flavor. I can't make anything by following the recipe exactly, so I made the following changes: decreased the white sugar to 1 1/2 cups (will probably try 1 cup next time), substituted 1 cup applesauce for the oil, increased the cinnamon to 2 tsp, and sprinkled cinnamon/sugar combination on top before it baked. It took quite a bit longer to bake than the recipe said (about 1:15 or 1:20--I lost track). It's delicious after it cools, but even better the next day.

Tart Lemon Triangles

Reviewed: Nov. 17, 2008
These were delicious! I doubled the filling recipe and cooked it for about 30 minutes until it was set. I really liked the "filling to crust ratio" with the filling doubled. I also decreased the sugar to 1 1/2 cups because I like lemony desserts tart. I will definitely make these again!

Peanut Butter Dog Biscuits

Reviewed: Aug. 23, 2008
These were really easy to make and the dogs love them. Instead of using cookie cutters, I rolled the dough out on a floured cutting board that is slightly smaller than my baking sheets and then used a pizza cutter to cut the dough. It made it easy to invert the cutting board onto the cookie sheet and slightly separate each of the dough squares before baking.

Rosemary Ranch Chicken Kabobs

Reviewed: Jun. 5, 2008
4 1/2 stars in our house! I baked chicken pieces in the marinade at 350 for about 20 minutes. I thought it was delicious, my husband thought it was good. I might decrease the lemon juice and vinegar next time because it was a little tangy for our taste, but the chicken was tender, and the sauce was delicious over rice.

Szechwan Shrimp

Reviewed: Mar. 24, 2008
This was a great recipe! Really quick and easy to make and delicious too. I used cut up chicken breast instead of shrimp and cooked it in a little bit of the sauce. The next time I make it, I will add veggies and peanuts or cashews.

Honey Wheat Bread III

Reviewed: Jan. 19, 2008
This bread is delicious. I found the recipe about 6 months ago and have made at least 4 loaves every month since then. I always double the recipe. The texture is light as is, but I've also tried adding a 1/2 cup oats and decreasing the white flour to make a heartier bread. This recipe is a keeper.

Krautburger

Reviewed: Jan. 19, 2008
These are really delicious. I made some substitutions to use ingredients that I already had. I left out the onion soup mix, but added worchestershire sauce, red pepper flakes, and some mesquite grill seasoning. I also used a honey whole wheat bread recipe from this site. Delicious and very filling!

Outrageous Chocolate Chip Cookies

Reviewed: Dec. 31, 2007
These are amazing! I made several kinds of cookies for Christmas and these were our family's favorites. I made a big batch and rolled them into 1 inch balls and froze them on a cookie sheet. Then I put them in a ziplock bag so I could bake just a few at a time. When I was ready to bake them, I let them thaw for a few minutes while the oven was heating and then increased the baking time for a few minutes. Delicious!

Panettone I

Reviewed: Dec. 22, 2007
I wish I would have read all of the reviews before I made this bread. The texture is great and I found it easy to make, but it doesn't have much flavor. If I try it again, I'll add honey or extra sugar like other have suggested. I replaced the currents with dried cranberries. The bites with the dried fruit in them are quite nice.

Peanut Sauce II

Reviewed: Jun. 7, 2007
My husband and I used to live in Indonesia and loved the peanut sauce there. This recipe is the most authentic one I've found. I used natural peanut butter and it was delicious. I substituted regular soy sauce for the tamari and left out the basil. It was very easy to make and delicious reheated. I will make this on a regular basis.
