Black-Eyed Pea Gumbo

It was a 5 star recipe after the following changes: doubled the garlic, only 3 cans of black beans, added cajun seasoning, 1 lb of sliced andouille sausage (lightly browned), 2 10oz cans of rotel (no regular diced tomatoes), simmered at least an hour and a half. Lots of flavor, a little kick but definitely not too spicy (there were some guests who don't like spicy foods). Yum!

Gingerbread Men

Okay flavor, but the cooking time was waayyy off. Went through two burnt batched and one undercooked before I had some usseable cookies.

Spinach-Stuffed Flounder with Mushrooms and Feta

Really good and easy. I followed the advice of other and used 1/4 cup feta for 3 fillets. Also sprinkled a mixture of bread crumbs, fresh garlic, onion powder, and lemon pepper on top. Plenty of flavor! It took MUCH longer to cook than 15 minutes- at least 25-30. Next time I'll uncover it for the last 5 minutes to crisp the bread crumbs.

Gourmet Mushroom Risotto

First time making risotto- this was really great. I had to make some changes. I didn't have chives or shallots, so I did one small yellow onion and 2 large cloves of garlic. Also, I only used 4.5 cups of broth before it was cooked. Very good- I'll definitely make it again.
