About this Cook
I am married with no children to a wonderful husband who is a schoolbus driver. I teach Exceptional Children (Mentally Handiacapped) and have taught for 34 years. My husband and I both enjoy our boat, pleasure riding and using it for fishing. We live in Florida, so there is no lack of beautiful waterways to enjoy. We also both enjoy working in our yard. My husband loves almost any kind of food, and doesn't mind being a "guina pig" when I try something new.
My favorite things to cook
I enjoy cooking brunch items and desserts, as well as trying new recipes in almost any category.
My favorite family cooking traditions
My favorite family cooking traditions would stem from my "growing up", when lowfat and healthy were not key words in cooking. Homemade crispy fried chicken, homecut french fries, made from scratch chocolate-cherry cake...YUM!
My cooking triumphs
I have made some recipes from cooking magazines that have turned out looking just like the pictures (casseroles, cheesecakes,salads).
My cooking tragedies
I attempted made-from-scratch cream puffs one Christmas. They never "puffed" , were the size of quarters and flat as pancakes. They were also as tough as nails! The garbage disposal gobbled them up, as they were not fit for human consumption.

Spicy Cheese Crackers
My mom made these for our reception when we got married 14 years ago. I've since made them and they are a crowd pleaser. I add a little extra cayenne pepper, as I like them a little spicier. They make a good Christmas gift packaged in a decorative tin or jar.

Coconut Cream Cake I
I made this for school yesterday, for a faculty breakfast. Everyone enjoyed it and asked for the recipe. There is none left! I wish I had taken a picture-will do that next time I make it. It makes a "picture-prefect" cake and was superb! I may cut the condensed milk in half next time, as it is a really sweet cake.

Pumpkin Bars with Cream Cheese Frosting
This is one of the best desserts that I have ever made using pumpkin. The bars were moist, flavorful and kept well for several days (they didn't last very long!).The icing perfectly complemented the flavors in the bars-an awesome dessert. I have made it 3 times in the past two weeks-everyone who tries it absolutely loves it!
