Morgan's Breakfast Polenta

I love this as a warm breakfast. I leave out the sourcream as I didn't have any the first time I made it, so now I just don't bother. I have used blueberry jam and Cherry as well. I think any jam would go great with this. PS-my 18 month old love it, too (and I skip the jam for him).

Ginger Snap Cookies

These were so good! I am 8 weeks pregnant and they are the perfect morning sickness cure. I used black strap molasses to get all I could out of a cookie. Easy and delish!

Ricotta Gnocchi

So good and easy! This was my second attempt at Gnocchi and far better than the first traditional recipe I tried. I used fresh garlic and added fresh basil and it was just fantstic. I skipped the sauce recipe and used my own recipe. My 18 month old could not get enough of them. Tomorrow I am going to make another batch and freeze them.

Quinoa and Black Beans

Really good. I followed the others advise and added to the recipe. I added zucchini and tomato as well as fresh lemon juice. I used only one can of beans but I only had a half a cup of Quinoa left. We put it in tortillas with raw cabbage and avacado and it was so fresh and delish. Good for you, easy and tasty.

Caramel Bread Pudding

I had left over hamburger buns (gourmet style) and had never made bread pudding before. I cut the suger in half and it was more than sweet enough. Served warm with vanilla icecream as others suggested and it went like wild fire. I also increased the cinnamon as recomended. Easy and delish!

Beaker's Vegetable Barley Soup

I love this soup! It is very hearty. I sub cabbage for celery and have used both kidney beans and lentals instead of garbonzos. I also added a pinch more of all of the spices and used chicken broth as it was what I had on hand. I puree a portion for my 16 month old and he loves it, too. Great with buiscits.

Cranberry Orange Loaf

Great moist bread. Super easy. I also sub applesauce for oil and it comes out perfect every time. Only other change is that I am unable to find fresh cranberrys right now (australian summer) so I have used fresh crans packed in water. Can't wait to try with fresh.

Addictive Sweet Potato Burritos

These were good, but somehow I expected more of a distinct differance of sweet and savory. I think next time I will maybe add a bit of cinnamon and maple syrup to the sweet potato.

Cinnamon Sugar Biscotti

My first attempt at biscotti and they turned out great. I used the basic recipe but actually made them orange and ginger instead of cinnamon suger. I used orange zest, fresh OJ in place of vanilla, and fresh ginger. Wonderful and easy!

Brown Rice and Black Bean Casserole

This was really good. We changed it up a bit and made it into burritos instead of casserole. I also added cilantro, cayenne peppper, green pepper, and jalapinos. I did not bake it but mixed the veg, beans, and rice together then filled tortillas and topped them with cheese. Very tasty.

Carrot and Ginger Soup

I love this soup. I added a teaspoon of orange zest, the juice of one orange and doubled the amount of ginger. My ten month old couldn't get enough of it either.

Roasted Chicken with Risotto and Caramelized Onions

Oh my god! I love this dish. I didn't change the amount of vinegar as I am a big fan of Balsalmic. I have made it a few times and I added asparagus one time and green beans the next. Both were great.

Asian Orange Chicken

This chicken is so tasty. I used yellow onion instead of green and added snow peas to the sause in the last few minutes. I also used a four/water mix to thicken. Turned out delish.

Low-Fat Blueberry Bran Muffins

I love these muffins. I have used the basic recipe with lots of variations: Oat bran instead of wheat bran, banana or plain yogurt for apple sauce, and dried cranberry or raisen for blueberry. Also recommend fresh ginger. Always turn out great!

Stuffed Peppers My Way

Yummy! I used red pepper and yellow onion and shortened roasting time as suggested as well as adding japenese pumpkin and mushroom. These were so good I am already looking forward to making them again.

Roasted Brussels Sprouts

I recieved brussels sprouts in my organic veg box and wasn't sure what to do with them. I'm was not a big fan but I am now. They are fantastic and soooo easy. I added some fresh lemon juice. I also cut them in half for quicker roasting. I suggest letting them get nice and brown. When you think they are done, give them a minute more.
